Compared to the classic imeruli khachapuri, the megruli version differs precisely in this striking outer cheese layer, which makes the dish even richer, stretchier and more appetizing. Knead a soft yeast dough with warm milk and an egg, then let it rise for 1-1.5 hours. Coarsely grate suluguni or imereti cheese. Roll the dough into a round, place a generous amount of cheese in the center, gather the edges into the middle, flip and roll out again. Top generously with more cheese. Bake at 220°C (425°F) for 15-20 minutes. Proportions for 2 khachapuri inside.
