Cake recipes

This section contains step-by-step recipes for cakes with photos - at home. Here you can also find simple, easy cake recipes that you can please your family not only on holidays.

Such delicacies can be divided into several groups, classifying them according to the composition of cakes and cream, the number of layers, cooking method.

Classification by composition

Choosing a recipe for a delicious cake, first of all pay attention to the types of cakes (sponge cake, sand, waffle, etc.) and the composition of the cream (custard, cottage cheese, butter, etc.). It is these components that affect the taste of the dish and its calorie content.

Dough

  1. Sponge cakes, except flour, are based on beaten eggs. Cakes after baking are soft even without impregnation.
  2. Puff pastry, as it is already clear from the name, is prepared from puff pastry. The cakes are made very thin, and you need a lot of them for the cake. This dessert has a high calorie content, as a lot of oil is added to the dough.
  3. Sponge cakes, except flour, are based on beaten eggs. Cakes after baking are soft even without impregnation.
  4. Puff cakes, as the name implies, are made from puff pastry. The cakes are made very thin, and you need a lot of them on the cake. This dessert is high in calories, as a lot of butter is added to the dough.
  5. Shortbread - dry and crumbly, as the dough is prepared on the basis of fats. To make the product softer, the cakes are soaked in wine or syrup.
  6. For honey cakes, the dough is made with the addition of honey. Any cream is suitable for baking with honey.
  7. Waffle cakes are made from waffle cakes, which are more often bought ready-made. But there are recipes for cakes, where cakes are prepared at home in a waffle iron. Waffle cakes are low-calorie.

Cream

  1. Custard is prepared by heating from cream or milk with the addition of sugar and eggs. They make the Napoleon cake and a number of other classic cakes with it.
  2. Butter keeps its shape well, it is used to make details for decorating cakes. For buttercream, use quality unsalted butter with 82.5% milk fat.
  3. For cottage cheese cream you need fresh cottage cheese 5% - 9% fat.
  4. Sour cream creams are very soft and tender, tasting with a slight sourness. A good cream is obtained only from fat sour cream.

By cooking method

There are two ways of making cakes: "with baking" and "without baking". In the first case, the cakes are baked on their own, and in the second, ready-made cookies, waffles or similar products are bought instead.

Sometimes cottage cheese and jelly (like blancmange) desserts are called cakes – the recipes are simple, they are prepared without baking, but this is a different kind of dessert.

Choose a delicious cake recipe and cook with pleasure!

San Sebastian cheesecake

San Sebastian cheesecake

Write a comment
San Sebastián cheesecake is a famous Basque dessert that originated at the La Viña restaurant in the Spanish city of San Sebastián, also known as the "burnt" or Basque cheesecake. Its defining feature is that it's deliberately baked to a very dark, almost burnt golden top, while the inside stays incredibly tender, creamy and slightly molten, like a glaze. It's the complete opposite of the classic American cheesecake: no shortcrust base, no water bath, minimum ingredients and the highest possible temperature. Beat cream cheese with sugar, add eggs, cream and a pinch of flour until smooth. Pour into a parchment-lined pan and bake at 220-240°C (430-465°F) for about 35-40 minutes until deeply golden. Proportions for a 20 cm pan inside.

Broken Glass Cake with Sour Cream and Jelly

Broken Glass Cake with Sour Cream and Jelly

Write a comment
"Broken Glass" cake with sour cream and jelly is a bright, colorful and remarkably striking no-bake homemade dessert in which cubes of differently flavored jelly are suspended in a tender sour cream base, looking exactly like shards of stained glass when sliced. The dessert has a rich berry flavor, a refreshing sour cream tang and isn't cloyingly sweet, which is why both children and adults love it. It's made in stages: a day in advance, cook and chill jelly in several different colors (cherry, orange, lemon) and cut it into cubes. Mix with thick sour cream, sugar and dissolved gelatin, gently fold in the jelly cubes and pour into a mold. Refrigerate for 4-6 hours until fully set. Proportions for a 22 cm pan inside.

Napoleon cake made from ready-made layers with custard

Napoleon Cake from Ready-made Layers with Custard in 5 Minutes

Write a comment
This Napoleon cake shortcut uses store-bought puff pastry layers and a silky homemade custard, so you can build a classic Russian-style mille-feuille in about 10 minutes – no oven, no mess. The custard is cooked from milk, egg yolks, sugar and butter into a thick, glossy cream that soaks beautifully into the crisp layers. After 4-6 hours in the fridge the cake softens into the tender, melt-in-your-mouth texture Napoleon is famous for. I'll show you how to whisk a lump-free custard, the right proportions for a 6-8 serving cake and a few easy decoration ideas. It's perfect when guests show up unexpectedly and you need something elegant fast.

Cherry cake with sour cream frosting

Bird Cherry Cake with Sour Cream Frosting

Write a comment
Bird cherry cake with sour cream frosting is a remarkable Siberian dessert with a rich chocolate-and-almond aroma that comes from ground bird cherries. It's a very interesting moist and tender cake with a unique flavor unlike anything else: a light bitterness, a subtle almond note and the characteristic "woodland" aroma that pairs especially well with thick sour cream frosting. Such a cake always impresses guests, since few people have tried bird cherry in baking. Steep dry bird cherry flour (or ground dried berries) in hot milk for 30-40 minutes to soften. Mix the batter from eggs, sugar, flour, baking soda, kefir and the soaked cherries. Bake at 180°C (350°F) for about 30-35 minutes. Slice the cooled sponge into 2-3 layers and generously frost with whipped sour cream and sugar. Proportions for a 22 cm pan inside.

Grafskie Razvaliny Cake with Sour Cream

Graph's Ruins Cake with Sour Cream

Write a comment
"Count's Ruins" cake (Grafskie Razvaliny) is a classic Soviet-era dessert with a dramatic look that resembles the picturesque ruins of an old castle — broken pieces of crisp meringue piled into a mound, bound together with creamy sour cream filling and drizzled with dark chocolate glaze. The meringues turn out airy and crisp thanks to properly whipped egg whites and slow drying at 100°C (210°F) for 1.5-2 hours. The sour cream filling is thick, moderately sweet and pleasantly tangy, balancing the sweetness of the meringue beautifully. Top with chocolate glaze, chopped nuts and a drizzle of white chocolate. Classic proportions for a 22 cm cake inside.

Pelé Cake

Pele Cake

Write a comment
"Pele" cake is an unusual and delicious Russian honey cake with walnuts that gets its playful name from the famous footballer — the dark walnut "spots" against the light layers and sour cream filling resemble a soccer ball. It's a variation on the classic honey cake (medovik) that incorporates chopped walnuts in the batter and a wonderfully tender sour cream filling between the layers. The honey dough is the traditional kind: honey, sugar, butter and baking soda heated together over a water bath, then mixed with eggs and flour into a soft, elastic dough. Roll out thin layers, bake at 180°C (350°F) for 5-7 minutes each, fill with sour cream filling and sprinkle generously with ground walnuts. Proportions for a 22 cm cake inside.

Witch Cake

Sorceress Cake

Write a comment
Russian "Charodeyka" cake is a famous Soviet-era cake that was loved in practically every family and remains one of the most popular classic desserts to this day. Despite its popularity, finding the genuine GOST recipe isn't all that easy. The defining features of the cake are a tender, airy sponge, a generous layer of custard cream and a characteristic glossy chocolate glaze on top. The combination of these three components gives a remarkably balanced, delicate yet rich flavor that for many recalls a carefree childhood. Bake the sponge from eggs, sugar and flour and slice into 2 layers. Cook the custard cream from milk, egg yolks, sugar and flour, cool and beat with soft butter. Frost the layers with the cream and pour melted chocolate with butter over the top and sides. Refrigerate for 4-6 hours. Proportions for a 22 cm pan inside.
