
Beef Liver Stroganoff
For this recipe, you need exclusively beef liver. Cut into strips, it is first fried with onions and then stewed in a sour cream and mustard sauce. This is how liver Stroganoff becomes soft and tender.
Cooking time: 20 minutes + if necessary, 1 hour for soaking the liver.

Ingredients
- beef liver – 800 g;
- fatty sour cream – 220 g;
- tomato sauce – 50 g;
- onion – 220 g;
- starch (any) – 35 g;
- honey mustard – 50 g;
- butter – 25 g;
- refined vegetable oil – 50 ml;
- salt, pepper – to taste;
- milk (if needed) – 250 ml.
Cooking Instructions
1. Prepare the ingredients. The tomato sauce can be any, even diluted from tomato paste, 1 tablespoon of which is mixed in 1/4 cup of water. The mustard should not be sharp – it’s better if it has a slightly sweet taste.

2. Liver from any young animal can be cooked immediately, but if it (especially beef) is dark in color, it should be soaked for an hour in milk and only then proceed to the main process.

3. In a skillet with heated oil, place the thinly sliced onions.

4. Fry until light golden in color.

5. Remove the film from the outer surface of the liver, lifting it with a knife and pulling it to the side. Cut out all the veins.

6. Cut the liver into elongated pieces.

7. Salt them, pepper them.

8. Mix well.

9. Next, sprinkle with starch.

10. Mix everything again.

11. In a skillet, heat a mixture of butter and vegetable oil.

12. Place the liver, trying to keep it all in one layer. Fry in this state for 2-2.5 minutes.

13. Turn the pieces over. Fry the second side for 2-2.5 minutes as well.

14. In a separate bowl, add tomato sauce and mustard to the sour cream.

15. Mix all the ingredients together.

16. When the liver is fried, transfer the onions to it.

17. Pour the sour cream and mustard sauce here as well.

18. Bring the dressing to a boil and simmer everything for 2-2.5 minutes, no more. Check the dish for salt, as the sauce has not been salted.

19. Beef liver Stroganoff is ready.

Prepared in this sequence, beef liver Stroganoff becomes very soft, with the original sweetish taste well perceived, enhanced by a special sauce. Suitable side dishes include spaghetti, rice, mashed potatoes, or buckwheat.
