Dumplings with frozen cherries

As with pies, there are many options for dumpling fillings to suit any taste and even no filling lazy dumplings made of cottage cheese. Many love cherry filling, and dumplings with frozen cherries can be made in winter as well. Cooked in dough, the taste of the berries will not differ from fresh ones, just be sure not to thaw them beforehand to avoid losing the juice. We will prepare a custard dough, unlike the classic version with unleavened dough. It is thin, tender, and pairs well with sweet fillings, including frozen cherries. For savory fillings, it's better to use classic unleavened dough

Ingredients

  • flour (wheat) - 440 g;
  • fine salt - 5 g;
  • water at 60 degrees - 240 ml.

Filling:

  • frozen cherries - a total of 600 g, but take it out of the freezer in parts, so it doesn't defrost;
  • sugar - 50-100 g (optional).

Preparation

1. In a bowl suitable for kneading, combine flour with salted hot water.

2. Once the flour has absorbed all the moisture, begin to knead the dough by hand.

3. As soon as the mass becomes homogeneous, cover it with plastic wrap and let it rest.

4. After about 5 minutes, transfer all the kneading onto the table. It will now be easier to knead it to a silky smoothness. Then you can roll out a large sheet and press out circles for the dumplings with a glass. However, the dough is quite thick, and the scraps collected for further rolling will be even tougher in the next batch. Therefore, it's better to make dough preparations for this dough in another way.

5. Leave a quarter of the total mass on the work surface, and hide the remainder in a bag. Roll the portion left aside into a sausage and cut into pieces.

6. Dip each piece at the ends in flour and press in the middle.

7. Roll the circles out to 2-3 mm.

8. Place half a teaspoon or a little more of sugar on them.

9. On top - 2-3 (depending on size) cherries from the freezer.

10. Pinch the edges, reinforcing by braiding the connection a second time.

11. In boiling water, drop the required amount of dumplings with frozen cherries.

12. From the moment of boiling, cook them for 2-3 minutes. Use a slotted spoon to remove the dumplings. To prevent the dumplings from sticking together too much, you can sprinkle them with sugar or grease them with oil once they are on the plate.

13. Some preparations can be laid out in a single layer and frozen, after which they can be transferred to a bag and stored in the freezer. When needed, boil them in the usual way.
