
Stuffed Zucchini with Minced Meat
Stuffed zucchini with minced meat are appetizing rolls that hold their shape well and look beautiful on the dining table. This interesting appetizer can be served warm or cold. Thanks to the harmonious ratio of ingredients, the miniature dishes have an exquisite taste and serve as a worthy substitute for traditional stuffed cabbage in the summer period. Zucchini goes perfectly with any type of meat and turns even very dry minced meat into a tender and juicy component of any multi-component dish.

Ingredients
To prepare the dish you will need:
- zucchini – 500 g;
- any meat minced meat – 200 g;
- onion – 60 g;
- rice – 50 g;
- tomato – 250 g;
- salt – 3-4 g;
- black pepper, ground paprika – to taste.

Cooking
1. Cut the zucchini into thin long strips. It is most convenient to do this with a vegetable peeler. Sprinkle the resulting slices with salt on both sides. After a quarter of an hour, remove excess moisture from the pieces using paper towels.

2. Do not throw away the leftover zucchini. They will go into the filling. Chop them very finely.

3. Pour boiling water over the rice for 10 minutes. Dice the onion into small pieces.

4. Combine the minced meat with rice, onion, chopped pieces of zucchini, salt, paprika, and pepper.

5. Form the rolls. Place the filling on a dried strip of zucchini.

6. Roll it up.


7. Do the same with the remaining ingredients. Carefully place the formed rolls in a deep frying pan.

8. Grate the tomato using a vegetable grater. Evenly cover all rolls with the resulting mixture. Bring the liquid to a boil. Simmer the rolls under a lid for no more than 30 minutes. The stuffed zucchini with minced meat on the pan are ready.

9. Garnish the finished dish with herbs. You can use sour cream, seasoned with a small amount of garlic crushed through a press, as a sauce for the rolls.
