Zucchini Roll with Minced Meat

There are many interesting dishes whose main component is zucchini. But the zucchini roll with mince is a true culinary masterpiece made from zucchini, because the dish is not only beautiful but also very tasty and juicy. Preparing such a roll is not a quick task. However, this dish is worth it.

Instructions

  1. Prepare the zucchini: wash them with a sponge or brush in cold water and remove the tails. Cut the zucchini into several small pieces. Place the vegetable pieces in the bowl of a food processor.

  2. Chop the zucchini into a puree. If you don't have a food processor, you can grate the vegetables on a fine grater or chop them using a blender.

  3. Separate the egg whites from the yolks. Add a teaspoon of salt to the bowl with the egg whites.

  4. Whip the egg whites with salt until a fluffy white mass is formed. It's best to do this with a mixer.

  5. Transfer the yolks into the bowl with the zucchini puree. Also, add the flour and the egg white foam to the bowl.

  6. Carefully mix all the combined components with a spoon. This needs to be done gently and quickly so that the whipped egg whites do not deflate.

  7. Line the baking sheet with special parchment paper, and then thoroughly grease it with sunflower oil. The roll base cannot be baked without paper, as it will stick to the bottom of the baking sheet, and removing it will be nearly impossible. Transfer the zucchini puree onto the prepared baking sheet and flatten it with a spatula. The chopped zucchini should be spread out quite thinly on the baking sheet. In this case, the snack will turn out tastier.

  8. Place the baking sheet with the zucchini base in an oven preheated to 200 degrees and bake it for about half an hour. While the zucchini base is baking, prepare the meat filling. Remove the outer layer of the onion, wash it, and cut it into thin cubes. Sauté the chopped onion in a pan lightly greased with vegetable oil. When the onion is browned, add the chicken mince to it.

  9. Mix the sautéed onion with the mince. Sauté the minced meat in the pan until fully cooked. At the end, lightly salt the filling of the roll. Meanwhile, the zucchini base should be browned.
