Amosov Paste - a simple recipe for a delicious and healthy dessert
Tips
- 1
SOAK FOR 2 HOURS – the "secret" to softness. Dry dried fruits do not grind well. After soaking, the meat grinder will handle them with ease.
- 2
LEMON WITH THE PEEL – the "secret" to the vitamins. The zest holds essential oils and vitamin C. Just remove the seeds.
- 3
LIQUID HONEY – the "secret" to a uniform texture. Crystallised honey mixes poorly. Warm it in a water bath for 5 minutes.
- 4
DRY ON A TOWEL – the "secret" to storage. Excess water = mould in the jar. The same principle works for other kinds of vitamin mixtures with nuts.
FAQ
What makes Amosov paste good for you? +
Amosov paste contains fibre, B vitamins, potassium, magnesium and antioxidants. It helps strengthen the immune system, improves digestion and supports heart health. Eating one tablespoon a day regularly helps during the cold season. It is ideal for people doing mental work. It is suitable for children from the age of 3 in small portions. It contains plenty of iron and potassium.
How long does Amosov paste keep? +
Stored in a glass jar with a lid in the refrigerator, it keeps for up to 30 days. The less moisture in the mixture, the longer the shelf life. Write the preparation date on the jar. If mould appears, do not use it – throw it away. You can pour a thin layer of honey over the top as "protection" against drying out. Stored in portions in the freezer, it keeps for up to 3 months. It is best to use it within the first 2 weeks.
Can Amosov paste be made without honey? +
Yes, date syrup, Jerusalem artichoke (topinambur) syrup or thick apple purée will work instead of honey. The flavour will change, but the sweetness and the benefit are retained. Date syrup is the "premium" option, brighter in flavour. Jerusalem artichoke syrup is the "diabetic" choice, neutral in taste. Do not use sugar syrup (no benefit) or artificial sweeteners. For people allergic to honey, substitutes are essential. The amount is the same – 200 g.
Are there any contraindications? +
Yes – an allergy to honey, nuts or citrus. The paste may also not be recommended in cases of diabetes and flare-ups of gastrointestinal conditions. If in doubt, consult a doctor. Introduce it to children under 3 with caution. With gastritis, limit it because of the lemon. For pregnant women, the amount is one tablespoon a day. People with allergies can test it with 1/4 teaspoon first.
