Russian lazy curd dumplings are a simple, tender and remarkably tasty home breakfast that many of us remember from childhood — moms and grandmas made them on weekends. The dish gets its name from the "lazy" method of preparation: there's no need to fold each dumpling individually with a filling, you just shape the curd dough into a long log and slice it into small pieces. The finished dish turns out soft and tender, with a gently sweet curd flavor and pairs beautifully with sour cream, honey or jam. Push the curd cheese through a sieve or blitz in a blender until smooth, add an egg, sugar, a pinch of salt and flour, and knead a soft non-sticky dough. On a floured surface roll into a log and slice into 2-3 cm pieces. Drop into boiling salted water and cook for 3-5 minutes after they float. Proportions for 500 g of curd cheese inside.
