Preparation

  1. Prepare everything necessary for the pear and plum compote for winter.

  2. Properly prepare the jars before conservation: wash them with baking soda (food-grade), then rinse thoroughly with clean water. Then be sure to sterilize. It is convenient to sterilize with steam. For this, put a pot of water on the fire. Place a rack and put the washed jars on it. After the water boils, hold the jars over the steam for about 5 mins. Boil the canning lids in a saucepan for several minutes.

  3. Thoroughly wash the pears and plums prepared for conservation.

  4. Split the plums in half, discard the pits.

  5. Cut the pears into wedges lengthwise. Carefully remove the core with seeds from the pear wedges.

  6. Evenly distribute the plum halves in the sterilized jars.

  8. Boil clean water and pour the boiling water over the fruits in the jars. Cover the jars with lids and leave them on the table for 10 mins.

  9. After 10 mins, pour the water into a small pot and bring this water to a boil. Add the sugar according to the recipe to the boiling water, stir and cook the syrup for 2 mins.

  10. Pour the syrup into the jars filled with fruits. Cover the jars with lids, but do not seal them. We will sterilize the compote. For this, we need to take a large pot, placing a thick cloth at the bottom. Carefully transfer the jars with compote, covered with lids, onto the cloth in the pot. Slowly pour hot water into the pot with jars, being careful not to pour over the jars. The water should reach the shoulders of the jars. Bring the water in the pot to a boil, adjusting the heat so that the water does not bubble. In this way, we sterilize the jars with plum and pear compote for 15 mins.

  11. Then remove the jars from the pot and seal them tightly. Check the quality of the sealing and carefully turn the jars upside down on the lids, leaving them under a blanket overnight.
