Ossetian pie with cheese and potatoes

Ossetian Pie with Cheese and Potato — Fragrant Yeast Bake

Write a comment
Ossetian pie with cheese and potato is a fragrant and hearty yeasted bake from mountainous Ossetia. It's a famous national dish without which no family celebration is complete, and one that has a deep symbolic and spiritual connection to Ossetian culture — by tradition the pies are baked in sets of three, and each has its own meaning. The defining features of a real Ossetian pie are thin, elastic dough and as much juicy filling as possible inside (roughly 1:1 by weight with the dough). In this version the filling is tender potato mashed with butter and grated salty suluguni or brynza cheese. Knead the dough on warm milk with yeast and let rise. Roll into a round, place the filling, gather the edges to the center, flip and roll out into a round again. Bake at 220°C (425°F) for 20-25 minutes. Proportions for 2 pies inside.

PP Khachapuri with cottage cheese

Healthy Khachapuri with Curd Cheese — Pan-Cooked

Write a comment
Healthy khachapuri with curd cheese is a wholesome, diet-friendly version of the famous Georgian flatbread in a clean-eating format, in which the heavy buttery dough is completely replaced with a light curd-and-oat dough and the classic rich suluguni cheese is swapped for tender low-fat curd cheese with herbs. It's an ideal choice for anyone watching their weight without giving up on beloved Caucasian dishes. The khachapuri turns out soft, fragrant and pleasantly cheesy, with significantly fewer calories than the classic. Mix curd cheese with an egg, oat flour (or ground oats) and baking powder into a soft dough. For the filling, take more curd cheese with herbs, garlic and salt. Form a round flatbread with the filling sealed inside. Cook on a dry or lightly oiled pan for 4-5 minutes per side under a lid. Proportions for 4 khachapuri inside.

Banana pancakes PP

Healthy Banana Pancakes — Sugar-Free and Flourless

Write a comment
Healthy banana pancakes are simple, wholesome and remarkably tasty fluffy pancakes in a clean-eating format that contain no sugar, no flour and no other "problem" ingredients. The natural sweetness of ripe bananas makes adding sugar completely unnecessary, and oat flour or simply blender-ground rolled oats perfectly replaces wheat flour. In taste they give nothing up to the classic version, while being far more nutritious — they're great for clean-eating breakfasts, for children and for anyone watching their weight. Mash ripe bananas with a fork into a puree, add an egg, oat flour or ground oats, a pinch of baking soda and cinnamon. Cook on a dry or lightly oiled pan over medium heat for 2-3 minutes per side. Serve with yogurt, honey or berries. Proportions for 8 pancakes inside.

Lakumy traditionally appear at weddings, holidays and major family gatherings, served hot with honey, sour cream, fresh cheese or just alongside strong tea. Knead the dough from warm milk, yeast, sugar, egg, oil and a pinch of salt, then let it rise for 1-1.5 hours until doubled, punch down and rise again. Lazy skillet pizza

Lazy Pizza on the Stovetop — Quick, No Dough Rolling

Write a comment
Lazy pizza on the stovetop is a quick, simple and remarkably tasty way to make pizza for anyone who dreams of their favorite dish but doesn't want to bother with yeast, rolling dough or the oven. The defining feature of this recipe is a pourable batter that comes together in 5 minutes, is poured straight into the pan and during cooking turns into a pizza base with your favorite toppings on top. In 15 minutes you have hot, fragrant and appetizing homemade pizza on the table that's every bit as good as the classic. It's an ideal solution for hungry kids, unexpected guests or lazy weekends. In a bowl whisk eggs with sour cream (or mayonnaise) and kefir, add flour, salt and baking powder and mix thoroughly until smooth. Pour the batter onto a hot oiled pan, top with tomato sauce, sliced sausage or ham, tomato, olives and grated cheese. Cook covered for 12-15 minutes. Proportions for a 26 cm pizza inside.
