  • 5 egg whites;
  • 100 g flour;
  • 1/2 tsp baking powder;
  • 1/2 tsp vanilla;
  • 20 g cornstarch;
  • 100 g sugar;
  • 1/2 tsp lemon juice;
  • 1/3 tsp salt.

Preparation

  1. Take the eggs out of the refrigerator in advance, as we need room temperature egg whites for this recipe. Place the egg whites in the mixing bowl, add salt, a little lemon juice, or you can use a substitute - citric acid. Start whipping the egg whites on the lowest mixer speed until a lot of bubbles appear.

  2. Gradually add the sugar while increasing the whipping speed. At the end of whipping, add a bit of vanilla or any other flavoring. Whip the egg whites until the sugar crystals are completely dissolved, which usually takes about 5-6 minutes.

  3. Combine the flour and cornstarch with the baking powder in one bowl and start gently adding them in parts to the egg whites. Mix the batter gently with a spatula in an upward motion so that the egg whites do not deflate too much.

  4. Line the bottom of the pan with parchment paper and transfer the batter into it. The batter will be quite thick, but this will not affect the fluffiness of the cake.

  5. Send the cake to a preheated oven at 175 degrees for about 25-30 minutes. During baking, it is forbidden to open the oven door, as there is a risk that the cake will deflate. You can check the readiness of the cake using a toothpick – poke the cake, and if it comes out dry, the cake is ready.

  6. First, let it cool for about 5-7 minutes right in the pan, then carefully detach the sides of the cake from the edges of the pan and remove it. Transfer the cake to a wire rack and let it sit for a few hours.

  7. Divide the angel food cake into layers, after which you can proceed to further assemble the cake. However, this step is optional, as it can also be a great option for tea time on its own. Look how snow-white it is when cut – it’s no wonder it’s called angel food!
