Quick pies or flaky triangles can be made with various fillings: cottage cheese, fruits, cheese, egg with herbs, stewed cabbage and fried meat. It is important not to make any filling too liquid.

Such a dish is suitable for a quick breakfast or dinner. Puff pastries will be appropriate for a picnic or on the go. Simple pies will be an excellent option for a quick snack at home or at work during lunch break.

Serve lavash pies with sour cream or other favorite sauces.

  • raw egg – 1 piece;
  • vegetable oil (refined) for frying – 50-75 ml.

For savory filling:

  • any hard cheese – 100 g;
  • cottage cheese – 100-120 g;
  • herbs (dill, parsley, onion) – a few sprigs;
  • favorite spices - to taste.

For sweet filling:

  • cottage cheese of any fat content (non-acidic) – 175 g;
  • granulated sugar – 1-2 tablespoons;
  • raisins or any dried fruits – to taste.

Preparation

  1. Chop the herbs for the savory filling.

  3. In a suitable container, mix the herbs and cheese, adding a pinch of your favorite spices.

  4. Add the cottage cheese to the cheese mixture. Use cheese and cottage cheese in a 50:50 ratio. In this proportion, the filling will not harden in the cooled pies.

  5. To brush the triangles before frying, beat the raw egg until smooth.

  6. Pour 1/3 of the beaten egg into the cheese filling, and mix thoroughly.

  7. For the sweet filling, mash the cottage cheese with sugar well using a fork (adjust the amount of sugar to your taste). If adding dried fruits to the filling (raisins, prunes or dried apricots), rinse them and soak them in hot water for 15-20 minutes.

  8. Cut the folded sheets of lavash into transverse strips 8-10 cm wide. The amount of sweet and savory filling in the recipe is calculated for one sheet of lavash.

  9. Place the filling on the corner of the strip, roll it into a triangle shape. Continue wrapping in this manner, tucking in any excess edge inside the triangle layer or cutting it off with a knife.

  10. Brush the pies on both sides with beaten egg using a silicone brush. Also, brush the inner seam of the last layer well. Due to this coating, the cooled triangles remain soft and fresh for a long time.

  11. Fry the triangles in hot vegetable oil. The average frying time on one side is about 45 seconds (keep the heat moderate).

  12. Fried lavash pies with cottage cheese and cheese can be conveniently removed from the pan with pastry tongs. To remove excess oil from the finished products, place them on a paper towel or napkin for a few minutes.
