
Dumplings with frozen strawberries
When the season for mass strawberry picking arrives, it is essential to freeze them, and then dumplings with frozen strawberries will be available at any time of the year. These dumplings taste no different from their counterparts with fresh berries. However, it is important to follow some rules when using frozen strawberries, namely:
- large fruits should be cut into 4-8 pieces (depending on size);
- be sure to add starch so that the filling thickens a little and doesn't leak during cooking;
- it's better to make the dough custard, as it is more elastic, which means it won't tear and will keep all the juice inside;
- roll out the circles for the dumplings not too thin - about 2-2.5 mm and make them quite large (d = 8 cm).

Cooking time: 40 minutes.
Yield: 7 servings.
Ingredients
- wheat flour - 300 g;
- hot water (approximately 60-70 degrees) - 150 ml;
- odorless vegetable oil - 15 g.

Filling:
- frozen strawberries - 300 g;
- starch (preferably corn) - 15 g;
- sugar - 60 g.

Preparation
1. For convenience in kneading, take a wide bowl. Sift the flour into it. Pour the water and oil into the center.

2. Start mixing the components with a spoon while they are hot. Disparate lumps will form.

3. Then knead the mixture a little by hand directly in the bowl, bringing it together into a cohesive mass.

4. Transfer the dough to a flat surface and continue kneading by hand, stretching and tearing it while doing so - this way, the dough will become smooth and homogeneous much faster. This process is not lengthy (about 2 min.) and not difficult, as warm dough is very easy to work with.

5. In the end, form a ball, place it in a bag, and leave it for 5 min. simply on the table.

6. Meanwhile, cut large strawberries into pieces that won't puncture the dough with their sharp edges (it’s also not necessary to chop too finely, otherwise, the dumplings won't be so juicy).

7. Mix the chopped strawberries with starch and sugar.

8. Mix everything thoroughly so that each piece is coated with dry ingredients.

9. Separate a third of the dough and roll it into a sausage. Cut it into pieces.

10. Dip the ends into flour, pressing the middle.

11. Roll out the circles.

12. Fill several blanks with the filling, and place the remaining ones (left in the plate) in the freezer so that the strawberries do not thaw.

13. Join the edges of the dumpling. To be safe, seal the seam once again.

14. To give the product a more festive look, make a simple frill using a wooden stick.

15. Lay the prepared items on a floured board.

16. Boil them in small batches of 3-4 servings in a 3-liter pot. After they float, let them boil for 3 minutes.

Like regular dumplings, dumplings with frozen strawberries can be prepared in advance, laying them in a single layer in the freezer. Then they are transferred to a bag or container.

This delicious dessert is served by sprinkling with sugar or drizzling with honey, rose petal jam, sour cream.
