
Chopped chicken breast cutlets

Ingredients
- chicken breast fillet - 670 g;
- white onion - 250 g;
- garlic - 1 large clove;
- eggs C 1 - 2 pcs;
- flour grade - 70 g;
- butter 82% - 50 g;
- salt, pepper - to taste;
- odorless vegetable oil for frying - 40 ml.
Preparation
1. Prepare the ingredients for the chopped chicken breast cutlets. It's better to slightly freeze the breast to make it easier to cut.

2. Chop the fillet as finely as possible with a knife. You should get cubes with a side no larger than 3-5 mm.

3. Chop the onion and garlic into a paste using a blender or another chopping device with rotating knives. The onion in this state will not be felt in the cutlets, but it will make them much juicier.

4. Place the chopped ingredients into a convenient mixing bowl.

5. Add the eggs and a piece of butter here as well.

6. Season everything with salt and pepper.

7. With your hand, kneading the lumps of butter, knead the minced meat. Small pieces of butter will remain, but that's actually good - during frying they will melt, soaking the cutlets.

8. Add sifted flour.

9. Now the mixture can be stirred simply with a spoon.

10. In a pan with heated oil for frying, place the minced meat with a spoon, shaping it into rounded-elongated cutlet shapes.

11. Fry each side for 3-4 minutes, not making the heat too high, so that the blanks can fully cook and not burn.

12. Fry a whole pile of cutlets this way.
