Spicy Sauce

In Japan, thick and spicy spicy sauce is used for dressing salads, hot rolls, and sushi. The classic recipe includes Asian thick mayonnaise, chili pepper, soy sauce, garlic, and flying fish roe. In the European version, flying fish roe can be replaced with myrtle roe without significant loss of taste.

Yield: 1 serving 150 grams of sauce.

Ingredients

  • 67% fat mayonnaise – 100 g;
  • salted myrtle roe – 50 g;
  • garlic – 2 cloves;
  • sesame oil – 1 tsp;
  • soy sauce – 1 tbsp;
  • spicy chili sauce – 1-2 tsp.

Preparation

1. Prepare the ingredients. Chili sauce can be replaced with half a teaspoon of finely chopped hot pepper (fresh or dried). If fresh roe is used instead of salted myrtle roe (or other fish with small, firm eggs), it needs to be lightly salted and left for 20 minutes before using in the recipe.

2. In a small bowl, combine mayonnaise and soy sauce.

3. Mix the mixture until homogeneous. It’s best to do this with a silicone spatula – it will collect the stirred products from the walls of the dish without leaving any residue and thoroughly mash them. To soften the spiciness of the following ingredients, pour in the sesame oil.

4. Add the chili sauce or hot pepper. Again, crush everything together.

5. Squeeze the garlic through a press or grate it with the finest grater into the mixture. Stir it so that the mass becomes smooth, and the garlic paste does not clump together in one spot.

6. Now, the last ingredient – fish roe – should be added. It will not only affect the taste and color of the sauce but also change its texture.

7. Mix everything again thoroughly. The roe should separate from one another, and the base should become silky, homogeneous, and thick. In the mouth, the roe will pleasantly crunch and pop, while the used additives will create an interesting combination of Asian aroma and spiciness.

The finished spicy sauce can be applied with a teaspoon to the top of the rolls and baked in the oven or used for regular sushi. Such a sauce is often served with rice and even baked potatoes. Try it, it’s very delicious!
