Strawberry Jam "Five Minutes"

The sweet little berry, strawberry, is probably the most canned fruit in the summer season. This is explained by the fact that its aroma and taste (after heat treatment) are very much in demand during rainy and frosty days. And to expose the berry to high temperatures as little as possible, nothing is better than strawberry jam "Five Minutes."

This name fully justifies itself - the jam really cooks for exactly 5 minutes. But it should be noted that in this case, the amount of sugar must be equal in weight to that of the strawberries. If there is less, the boiling time needs to be increased.

Yield: 2 jars (1 jar of 200 g and 1 jar of 350 g).

Preparation time: 15 minutes + 8-10 hours for cooling.

Caloric content: 219 kcal per 100 grams of the dish.

Ingredients

  • strawberries - 500 g;
  • sugar - 500 g;
  • citric acid (optional) - a pinch.

Jars for canning need to be sterilized in the oven or by steaming, and the metal lids should be boiled, so that by the time of pouring the jam, everything is ready.

Preparation

1. Prepare the listed ingredients.

2. Remove the stems, wash the strawberries, and place them in a heatproof container (either with a thick bottom or made of food-grade stainless steel). Cut large berries, as all of them need to cook evenly in such a short time.

3. Pour in all the sugar and, if desired, the citric acid (it helps preserve the color better).

4. Place the sugar-strawberry mixture on low heat. The longer the heating process, the more juice will be released. Continuously stir the mixture, bringing the bottom layers up. As soon as all the strawberries sink into the syrup formed, and the first bubbles of boiling appear, start the timer. The jam should boil for exactly 5 minutes.

5. Place the jar on a plate lined with a paper napkin, so the glass does not crack from the sudden temperature change. Fill the jar with jam to the brim.

6. Screw on the lids and place the jar upside down. Leave it to cool in that position.

Although strawberry jam "Five Minutes" always turns out a bit runny, it is incredibly aromatic, with a pleasant meatiness of the berries. The syrup is perfect for making refreshing drinks, and it goes well with pancakes and casseroles, as well as whole berries. The sealed jars can be stored not even in cool places, but in a regular room.
