
Tomato juice for winter at home
In order to enjoy a glass or two of natural tomato drink without seeds, skin, and preservatives whenever you want, it is essential to prepare tomato juice for winter at home. It can also be used for making various sauces and gravies.
Yield: 2 jars with a total volume of 1.25 l.
Preparation time: 60 minutes.
Caloric content: 27 kcal per 100 grams of the dish.
Ingredients
- ripe tomatoes - 1.7 kg;
- rock salt - 13 g (based on 10 g per 1 kg of crushed tomatoes);
- white sugar - 34 g (based on 25 g per 1 kg of crushed tomatoes).
Preparation
1. Prepare the ingredients. Any variety and shape of tomatoes are suitable for this preparation - as long as they are maximally ripe, juicy, and sweet.

2. To obtain juice, it is easiest to use a juicer, but even without special equipment, excellent results can be achieved. Cut the tomatoes into pieces that are convenient for a meat grinder or food processor, remove the green part near the stem.

3. Grind the tomatoes into a paste-like mass. The amount of juice directly depends on the ripeness and juiciness of the selected fruits.

4. Pour the thick tomato mixture, which still contains seeds and skins, into a pot, but they need to be eliminated.

5. To make this easier, boil the tomato for 20 minutes - then the mass will be easier to strain through a sieve. There is no need to collect the foam that forms. Meanwhile sterilize glass containers and metal lids in any way you prefer.

6. After the specified time, the thick mass will start to settle, and a transparent juice will appear on top - this is the signal to start straining. Pour some of the tomato into a sieve and start pressing it through, for example, with a ladle.

7. Or strain with a stiff silicone spatula. As a result, only the skins and seeds remain on top.

8. Now the pure juice needs to be weighed to calculate the amount of salt and sugar. They should be added to the tomato. Boil the mixture for 5 minutes.

9. Pour the juice into the prepared containers.

10. Screw on the lids and leave the tomato to cool on the table.

11. The perfect, well-balanced taste of tomato juice made without special appliances can be stored at room temperature until the next harvest.
