
Yeast-free kefir pizza dough
Yeast-free kefir pizza dough is convenient to prepare and very tasty, suitable not only for making pizza but also various savory buns and stuffed pies. The dough is very porous, thanks to the soda included in the composition, and is very tender and soft. The convenience of preparing this dough is that you don’t need to waste time on proofing; it’s simple – mix the dough, roll it out (by the way, it rolls out easily!), add the filling and bake in the oven!

Ingredients
- flour - 600-700 g;
- kefir - 200 g;
- egg - 1 pc;
- soda - 0.5 tsp;
- salt - 0.5 tsp;
- sugar - 1 tbsp;
- vegetable oil - 50 ml.
Preparation
1. Prepare all the necessary ingredients for making yeast-free kefir pizza dough. You can use any fat content of kefir; I have 1%. The only thing is, if you use a fattier kefir, it will be thicker and you’ll need less flour. From the specified amount of flour, I get quite a lot of dough, enough for 2 pizzas with a diameter of 32 cm.

2. Pour the room temperature kefir into a large bowl. Add the egg and mix.

3. Then add the soda, salt, sugar, mix, and pour in the vegetable oil.

4. Sift the flour into the dough (it’s better to sift several times to saturate the dough with air as much as possible) and knead the dough. Start by mixing with a whisk, then transfer the dough to a work surface and knead it by hand. Occasionally dust the surface with flour so the dough doesn't stick to your hands. But at the same time, try not to over-flour the dough. Knead the dough for at least 10 minutes.

5. This is how soft and tender the yeast-free kefir pizza dough turns out. It’s well-kneaded and holds its shape well. The dough is ready for further pizza preparation.
