Invert syrup prevents sugar crystallization in baking and creams, keeps baked goods softer and extends their freshness. Bring water, sugar and a pinch of citric acid to a boil, then reduce the heat to minimum and simmer covered for 30-40 minutes until you get a pale yellow thick syrup. At the very end add a pinch of baking soda dissolved in a drop of water — this neutralizes the citric acid. Pour the cooled syrup into a glass jar. Proportions for 700 g of sugar inside.
