Sugar-Free Apple Fruit Leather in the Oven
Instructions
Prepare the apples. Wash the fruit, quarter it and remove the cores. Leave the peel on. Cut large wedges into 2 or 3 pieces so they soften evenly.
Soften the apples. Put the apples in a heavy-based saucepan, add 50 ml water and cover. Cook over low heat for 20-25 minutes, stirring every 5 minutes. The pieces should be completely soft but not scorched.
Make a smooth puree. Add the lemon juice and optional cinnamon. Blend the hot apples until completely smooth. If the puree looks watery, cook it uncovered for another 5-10 minutes while stirring continuously.
Spread the puree. Line a 30 by 40 cm tray with a silicone mat or high-quality silicone-coated baking parchment. Spread the puree into an even rectangle 4-5 mm thick. Make the outer edge about 1 mm thicker because it dries faster.
Dry the fruit leather. Put the tray on the middle shelf. Dry at 70-80 C with fan assistance for 6-8 hours. Without a fan, leave the oven door open by 1-2 cm using a wooden spoon. Start checking every 30 minutes after the first 5 hours.
Peel and cut. Finished fruit leather is dry on top, flexible and easy to lift from the mat. There should be no wet patches. Cool it completely, peel it away, cut into strips and roll. If it snaps, it has dried too long, but the pieces can still be eaten like apple chips.
About this recipe
This is not fluffy Belyov pastila made with egg white. It is a thin sheet of dried fruit puree with a concentrated apple flavour. The peel does not need to be removed because it blends smoothly and contributes useful pectin.
A 1.5 kg batch of apples yields approximately 300 g, or 12 portions of 25 g. The estimated energy value is 235 kcal per 100 g and varies with apple variety and final moisture.
Which apples work best?
Choose aromatic tart-sweet apples with fairly firm flesh. A mixture of sharp cooking apples and sweet eating apples produces a balanced flavour. Very sweet summer apples also work, but the result may taste less vivid. Lemon juice adds acidity and helps slow browning.
Drying temperature and time
| Method | Temperature | Time | Note |
|---|---|---|---|
| Fan oven | 70-80 C | 6-8 hours | Main method |
| Conventional oven | 70-80 C | 7-9 hours | Leave the door ajar |
| Dehydrator | 55-60 C | 7-10 hours | Judge by flexibility |
The exact time depends on apple moisture, layer thickness and actual appliance temperature. Do not increase the heat to hurry the process. The edges can become brittle while the centre remains wet.
Common problems
- It remains sticky. The layer is too thick or humid air is trapped in the oven. Continue drying and provide a way for steam to escape.
- It sticks to the paper. Thin untreated parchment often absorbs moisture. A silicone mat or silicone-coated parchment is more reliable.
- The edges crack while the centre is wet. The puree was spread unevenly. Make the edges slightly thicker next time.
- The flavour is flat. Add some sharp apples or lemon juice. Added sugar is not required for a vivid apple flavour.
- The puree turns brown. This is normal. Lemon juice keeps it somewhat lighter, but an amber colour develops during drying.
Storage
Roll each strip with a narrow piece of parchment to prevent sticking. Keep it in an airtight container in a cool, dry place for up to 2 weeks. Refrigeration can extend storage to about 1 month. Let the closed container warm before opening so condensation does not form on the fruit leather.

FAQ
Should apples be peeled? +
No. The peel contains pectin and is not noticeable after thorough blending. Remove only the cores, stems and damaged parts.
Can it be made without lemon juice? +
Yes. Lemon juice gives a brighter flavour and colour, but it is not required for the puree to dry.
How do I know it is ready? +
It should not stick to a finger, should lift easily from the mat and should bend without leaving a wet mark at the fold. It firms slightly as it cools.
Why does fruit leather crack? +
It was probably dried too long or spread too thinly. Eat the pieces as apple chips and remove the next batch earlier.
Can I use a dehydrator? +
Yes. Spread the puree on a solid liner and dry at 55-60 C for approximately 7-10 hours.
Can honey be added? +
Yes, add 1-2 tablespoons if the apples are very sharp. It will no longer be free from added sugars and may take slightly longer to dry.
How is this different from Belyov pastila? +
Fruit leather is a thin sheet of dried apple puree. Belyov pastila is usually light, layered and made with whipped egg white and sugar.
