To prepare the spicy liver cake with mushrooms "Tenderness", the following products are needed:
- pork liver – 1 kg;
- champignon mushrooms – 1 kg;
- chicken eggs – 3 pcs;
- wheat flour – 1 cup;
- mayonnaise – 400 g;
- milk – 1 cup;
- ground pepper – 1 tsp;
- salt – 2 tsp;
- large onion – 1 pc;
- olive oil – 5 tbsp;
- processed cheese – 1 pc;
- cucumber – 1 pc;
- garlic – 4 cloves.
Preparation
- Start by preparing the liver batter. Rinse the pork offal under running water, then cut off all the membranes with a sharp knife. If this is not done, the cake will have tough veins. Cut the pork liver into small pieces and then place it in the bowl of a food processor. Grind the offal. Transfer the liver mass to a deep and clean bowl, add 2 tbsp of mayonnaise and beat in the chicken egg.
- First, choose a frying pan. For this cake, it is best to use a pan with a small diameter. After all, the layers from the liver batter turn out very tender. If you fry them in a large pan, it will be very difficult to flip such pancakes. Grease the chosen pan with oil, heat it up, and then pour in 2-3 tbsp of liver batter. Flatten the batter with a spoon on the bottom of the pan and brown on both sides.
- Fry all liver pancakes. While the layers of the future cake cool down, prepare the "cream." Peel the onion. Rinse the peeled onion and finely chop it on a cutting board with a sharp knife. Fry the chopped onion in vegetable oil. While the onion is frying, prepare the champignons. Wash them and remove the dirty top layer. By the way, set aside 2-3 large mushrooms for decorating the dish, and chop the remaining mushrooms into small pieces, adding them to the fried onion.
- Brown the mushrooms with onion. When the vegetables are fully cooked, add 2 tbsp of mayonnaise to them (homemade mayonnaise can be used). 7. Mix the components and keep them on low heat, constantly stirring with a spatula. Transfer the mixture to a clean container. Meanwhile, set the remaining chicken eggs to boil. They need to be boiled for 10 minutes. While the eggs are boiling, grate the processed cheese through a fine grater. Add it to the fried mushrooms. Peel the garlic, rinse it, pass it through a garlic press, and also add to the mushrooms.).
