Liver Cake with Mushrooms "Tenderness"
Instructions
Start by preparing the liver batter. Rinse the pork offal under running water, then cut off all the membranes with a sharp knife. If this is not done, the cake will have tough veins. Cut the pork liver into small pieces and then place it in the bowl of a food processor. Grind the offal. Transfer the liver mass to a deep and clean bowl, add 2 tablespoons of mayonnaise and beat in a chicken egg.
Thoroughly mix the combined components with a spoon. Pour the milk into the liver, add flour, ground pepper, and salt.
Mix the ingredients again thoroughly. It is best to do this with a blender. Ensure there are no lumps in the batter. You can start frying the layers for the cake.
First, choose a frying pan. For this cake, it is best to use a pan with a small diameter, since the layers from the liver batter turn out very tender. If you fry them in a large pan, it will be very difficult to flip such pancakes. Grease the chosen pan with oil, heat it up, and then pour in 2–3 tablespoons of liver batter. Flatten the batter with a spoon over the bottom of the pan and brown on both sides.
Fry all the liver pancakes. While the layers of the future cake cool down, prepare the "cream". Peel the onion. Rinse the peeled onion and finely chop it on a cutting board with a sharp knife. Fry the chopped onion in vegetable oil. While the onion is frying, prepare the champignons. Wash them and remove the dirty top layer. By the way, set aside 2–3 large mushrooms for decorating the dish, and chop the remaining mushrooms into small pieces, then add them to the fried onion.
Brown the mushrooms with onion. When the vegetables are fully cooked, add 2 tablespoons of mayonnaise to them (you can use homemade mayonnaise).
Mix the components and keep them on the lowest heat, stirring constantly with a spatula. Transfer the mixture to a clean container. Meanwhile, set the remaining chicken eggs to boil. They need to be boiled for 10 minutes. While the eggs are boiling, grate the processed cheese through a fine grater. Add it to the fried mushrooms. Peel the garlic, rinse it, pass it through a garlic press, and also add it to the mushrooms.
Mix the combined components. The filling for the cake is ready. Start preparing the decoration. Cut the previously set-aside mushrooms into long, thin slices.
Brown the mushroom slices in a dry pan. Do not add oil, or the mushrooms will lose their shape. Cool the mushroom slices.
Meanwhile, the eggs should be cooked. Cool them, peel off the shells, and proceed with assembling the liver cake. On a wide plate, lay down the first pancake, lightly grease it with mayonnaise, and then add the filling. Carefully spread the filling over the entire pancake.
Place the second pancake on the filling, grease it with mayonnaise and filling. Do the same with the remaining layers. Grease the top and sides of the appetiser cake with mayonnaise.
Cut the cooled eggs in half. Carefully separate the whites and yolks. Pass both the whites and the yolks through a fine grater, but into different bowls. Use the grated whites to coat the sides of the cake, and decorate the top with the yolks.
Cut the cucumber in half. Slice each half of the cucumber into thin pieces. Decorate the dish with mushroom slices and cucumber.
