To prepare the spicy liver cake with mushrooms "Tenderness", the following products are needed:

  • pork liver – 1 kg;
  • champignon mushrooms – 1 kg;
  • chicken eggs – 3 pcs;
  • wheat flour – 1 cup;
  • mayonnaise – 400 g;
  • milk – 1 cup;
  • ground pepper – 1 tsp;
  • salt – 2 tsp;
  • large onion – 1 pc;
  • olive oil – 5 tbsp;
  • processed cheese – 1 pc;
  • cucumber – 1 pc;
  • garlic – 4 cloves.

Preparation

  1. Start by preparing the liver batter. Rinse the pork offal under running water, then cut off all the membranes with a sharp knife. If this is not done, the cake will have tough veins. Cut the pork liver into small pieces and then place it in the bowl of a food processor. Grind the offal. Transfer the liver mass to a deep and clean bowl, add 2 tbsp of mayonnaise and beat in the chicken egg.

  2. Thoroughly mix the combined components with a spoon. Pour the milk into the liver, add flour, ground pepper, and salt.

  3. Mix the ingredients again thoroughly. It is best to do this with a blender. Ensure there are no lumps in the batter. You can start frying the layers for the cake.

  4. First, choose a frying pan. For this cake, it is best to use a pan with a small diameter. After all, the layers from the liver batter turn out very tender. If you fry them in a large pan, it will be very difficult to flip such pancakes. Grease the chosen pan with oil, heat it up, and then pour in 2-3 tbsp of liver batter. Flatten the batter with a spoon on the bottom of the pan and brown on both sides.

  5. Fry all liver pancakes. While the layers of the future cake cool down, prepare the "cream." Peel the onion. Rinse the peeled onion and finely chop it on a cutting board with a sharp knife. Fry the chopped onion in vegetable oil. While the onion is frying, prepare the champignons. Wash them and remove the dirty top layer. By the way, set aside 2-3 large mushrooms for decorating the dish, and chop the remaining mushrooms into small pieces, adding them to the fried onion.

  6. Mix the combined components. The filling for the cake is ready. Start preparing the decoration. Cut the previously set aside mushrooms into long thin slices.

  7. Brown the mushroom slices in a dry pan. Do not add oil, or the mushrooms will lose their shape. Cool the mushroom slices.

  8. Meanwhile, the eggs should be boiled. Cool them, peel them, and proceed with assembling the liver cake. On a wide plate, lay down the first pancake, lightly grease it with mayonnaise, and then add the filling. Carefully spread the filling over the entire pancake.

  9. Place the second pancake on the filling, grease it with mayonnaise and filling. Do the same with the remaining layers. Grease the top and sides of the appetizer cake with mayonnaise.
