Sheet pan roasted vegetables are a versatile side dish, vegan main course or salad base that comes together in about 40 minutes with almost no hands-on work. Almost any vegetable works: baby potatoes, carrots, zucchini, eggplant, bell peppers, cherry tomatoes, cauliflower, broccoli, onions and whole garlic cloves. The key is cutting everything to roughly the same size so they roast evenly. Drizzle with olive oil, season with salt, paprika, Italian herbs and granulated garlic, toss with your hands and spread in a single layer on a sheet pan. Roast at 200°C (400°F) for 30-35 minutes, stirring once. Proportions and tips for perfectly caramelized results inside.
