  • allspice (peas) - 4 pcs;
  • vegetable oil - 4 tbsp.

Preparation

  2. For convenience, prepare all the vegetables right away. Let’s start with the zucchini. It’s better to take young zucchini with thin skin and small, underdeveloped seeds. With such zucchini, there will be less waste and hassle. After washing the fruits, we dry them. Then, cutting off the stems, we slice the vegetables. The shape of the cut doesn’t matter because we will grind the zucchini later. If we cut the zucchini into circles, they will fry better and faster. The optimal thickness of the circles is about 0.7 cm.

  3. Pour refined oil into the frying pan and now fry our zucchini until golden brown.

  4. Place the fried vegetable circles into a small pot.

  5. Add 1 tbsp of water, then cover with a lid and simmer for 20 minutes.

  6. After peeling the onion, cut it quite coarsely and randomly. After peeling the carrot, grate it on a grater with large holes.

  7. Sauté the onion over low heat until soft, not browning it. Add the carrot here. Stew the vegetables together so that the carrot becomes softer.

  10. Now transfer the vegetable puree from the blender into a cooking pot with a thick bottom, so that the vegetable puree doesn’t burn. A small pot is very convenient for this purpose. Place the pot with vegetable mass over low heat. Stirring the mixture, start stewing.

  11. Add 1 tbsp of tomato paste with a small heap. Stew the mixture for 10-15 minutes under a lid until thickened.

  13. Now grind the peppercorns in a grinder. Pour the ground pepper into the pot with caviar. After mixing, simmer for another 3-5 minutes. At this stage, stir the caviar constantly. Do this carefully, as the thickening mass starts to bubble and splatter hot drops of zucchini mass. Bring the caviar to the desired thickness and remove from heat.
