
Zucchini Caviar “Finger-Licking Good”
Zucchini caviar “Finger-Licking Good” is a very tasty appetizer that doesn’t last long on the table. The dish is bright, juicy, and appetizing.

- young zucchini - 1000 g;
- carrot - 200 g;
- onion - 200 g;
- black pepper (peas) - 10 pcs;
- sugar - 1.5 tsp;
- tomato paste 25% - 1 tbsp (with a heap);
- salt - 1 tsp;
- allspice (peas) - 4 pcs;
- vegetable oil - 4 tbsp.
Preparation
- For convenience, prepare all the vegetables right away. Let’s start with the zucchini. It’s better to take young zucchini with thin skin and small, underdeveloped seeds. With such zucchini, there will be less waste and hassle. After washing the fruits, we dry them. Then, cutting off the stems, we slice the vegetables. The shape of the cut doesn’t matter because we will grind the zucchini later. If we cut the zucchini into circles, they will fry better and faster. The optimal thickness of the circles is about 0.7 cm.
- Now grind the peppercorns in a grinder. Pour the ground pepper into the pot with caviar. After mixing, simmer for another 3-5 minutes. At this stage, stir the caviar constantly. Do this carefully, as the thickening mass starts to bubble and splatter hot drops of zucchini mass. Bring the caviar to the desired thickness and remove from heat. Zucchini caviar “Finger-Licking Good” is now almost ready. Take the caviar to a cool place to cool down.
