Borscht preparation for winter with beetroot is the perfect way to make your life easier when cooking borscht. With this preparation, the borscht turns out very tasty, hearty, and rich. All the main ingredients for borscht are already in this preparation - beans, beetroot, carrots, onions, and tomatoes; you just need to boil meat broth, add potatoes and cabbage. Cooking time is reduced significantly, and the borscht turns out very tasty, in my opinion, even tastier than regular borscht without this preparation.

- beetroot - 1-2 pcs;
- onion - 1-2 pcs;
- carrot - 1 pc;
- sweet pepper - 1 pc;
- beans - ⅔ cup;
- tomato paste - 70 g;
- water - 200 ml;
- salt - 1 tsp;
- 9% table vinegar - 1 tbsp;
- vegetable oil - 2 tbsp.
Preparation
1. Prepare all the necessary ingredients for making borscht preparation for winter with beetroot. Peel all the root vegetables; remove the seeds and stems from the sweet pepper. Clean the beans from debris and rinse. You can soak them in cold water for a few hours beforehand.

2. Cut the onion into small cubes.

3. Grate the carrot on a coarse grater.

4. Finely chop the sweet pepper.

5. Boil the beans until half done for about 30 minutes. Cooking time depends on the type of beans; mine takes quite a long time.

6. In a thick-walled pot or large skillet, heat the vegetable oil, add the onion, carrot, and sweet pepper, and cook, stirring, for about 5 minutes.

7. Meanwhile, grate the beetroot on a coarse grater.

8. Add the beetroot to the other vegetables, mix, and cook over medium heat until all the vegetables are soft.

9. Then add the tomato paste, pour in about 200 ml of water, put it on the heat, and bring to a boil. Stew for a few minutes.

10. Add the beans that are cooked until half done, as well as salt and table vinegar. Stir and cook everything together for about 5-7 minutes.

11. Distribute the borscht preparation into sterilized jars and seal with metal lids. I ended up with 2 jars of 420 ml each. One jar is enough for making one borscht.
