Necessary products for preparing zucchini with tomatoes for winter. To get a tasty and beautiful salad, we pay careful attention to the choice of vegetables. We take young zucchini, not fully ripe, as these zucchinis are more tender and contain quite small and soft seeds. We choose meaty tomatoes. We pay attention to the sweet pepper, or rather its color. It is preferable to take red pepper. Moreover, we choose quality vegetables for canning, without signs of spoilage.

  • zucchini - 2 pcs. (500 g);
  • tomatoes - 150 g;
  • carrot - 1 pc. (125 g);
  • tomato paste - 1 tbsp;
  • water - 300 ml;
  • onion - 1 pc. (100 g);
  • bell pepper - 1-2 pcs. (125 g);
  • garlic - 2-3 cloves;
  • salt - 1 tsp;
  • sugar - 30 g;
  • vegetable oil - 60 ml;
  • vinegar 9% - 1 tbsp. (slightly less than full).

Preparation

  1. Young zucchinis do not need to have their skins removed. Rinse the vegetables thoroughly under running water. Cut off the stems, and slice the fruits into rounds. Cut large rounds into quarters, and small rounds can be cut in half.

  2. Dilute the tomato paste in warm water according to the recipe. Add salt, sugar, and oil. Bringing the tomato sauce to a boil, pour in the sliced zucchini.

  3. Boil the zucchini in the tomato sauce at a low boil for 15 minutes.

  4. Slice the onion into half rings, cut the pepper into thin strips, and grate the carrot on a coarse grater.

  5. Add the chopped carrot, onion, and pepper to the cooking pot with the zucchini and tomato. Boil the vegetables for 15 minutes.

  6. Cut the tomatoes into slices.

  7. Finely chop the garlic cloves with a knife. Add the tomato slices with the garlic to the cooking pot with the other salad ingredients. Cook the vegetables with the tomatoes and garlic for another 10-15 minutes. 2 minutes before the end of cooking, add 1 tbsp. (not full) of vinegar. Taste the sauce. If you want more acidity, you can add more vinegar.

  8. We place the hot zucchini salad with vegetables along with the sauce into the sterilized jar. Seal hermetically with a boiled lid. From this quantity of products, you will get a jar of 0.5-0.6 l. We turn the jar with the salad upside down, wrap it in a blanket, and leave it for 12 hours. Then we transfer the preserves to a cool place. The preparation can be stored in an ordinary apartment, but it’s better to find a cool spot.

  9. We open the jar in winter - and we already have dinner ready!
