These mixed vegetable pickles are one of the prettiest and most practical winter preserves — cucumbers, tomatoes, bell peppers and sometimes zucchini or cauliflower all packed into a single jar of bright, tangy brine. The triple-pour method skips water-bath sterilization: pack the vegetables into jars, pour over boiling water and let stand for 10 minutes, drain and repeat with fresh boiling water, then on the third pour use a hot marinade of salt, sugar, 9% vinegar and spices. Cherry plum compote for winter is a refreshing, fragrant and remarkably beautiful homemade drink with a natural tartness that brings joy any time of year, recalling the hot summer months and the abundance of summer's gifts. Cherry plum (alycha) is a close relative of regular plum but with a more pronounced acidity and a delicate gentle aroma that makes the compote especially pleasant for quenching thirst. The finished drink has a beautiful amber-pink or reddish hue (depending on the variety) and needs no added citric acid, since the natural acidity in the fruit itself is more than enough. Sort, rinse and pack ripe firm cherry plums into sterilized 3-liter jars to about a third full. Pour over boiling water for 10-15 minutes, drain the water back into a pot, add sugar, bring to a boil and pour back. Seal immediately and turn upside down to cool completely. Compared to the version with pits, it's much easier to eat and perfect as a filling for pies, strudels and crepes — no spitting out pits required.
