Buckwheat soup with mushrooms

  • 3 l of water;
  • 4 tbsp of buckwheat;
  • two large potatoes;
  • one carrot;
  • one onion;
  • dill;
  • a few bay leaves;
  • 200 g of champignons;
  • 2 tbsp of Teriyaki soy sauce;
  • sunflower oil;
  • salt and pepper;
  • seasoning "Italian herbs."

Preparation

  1. Pour water into a container and place it on the heat. For a three-liter pot, prepare two large potatoes. Rinse under running water, peel and cut into cubes.

  2. Meanwhile, the water in the pot has boiled, so carefully transfer the chopped potatoes into the container.

  3. Let’s take care of the mushrooms. Rinse thoroughly in clean water, blanch in boiling water, and cut into small pieces.

  4. Sauté the champignons in sunflower oil until they acquire a nice golden color. Then add 2 tablespoons of Teriyaki soy sauce, salt, pepper, and seasoning. Remove from heat after a minute.

  5. The potatoes in the pot are not boiling yet, so there is time to prepare the buckwheat. Rinse it thoroughly under running water using a sieve.

  6. Then pour the buckwheat into the boiling water. Bring to a boil. Add pepper, seasoning with various herbs, and definitely salt. Cook for 10 minutes.

  7. Peel the onion and chop finely.

  8. Slightly brown the chopped onion in a heated frying pan.

  9. Peel the carrot and grate it.

  10. Add the grated carrot to the frying pan with the onion. Sauté a bit in vegetable oil and remove from heat.

  11. Add the mushrooms, soaked in Teriyaki sauce, to the pot. Also, place a few bay leaves and later the sauté of onion and carrot.

  12. Finally, finely chop the greens on a board.
