Dorado is a delicate white fish with a sweet, mild flavor that's especially prized in Italy, Greece and Spain. Wrapping it in foil preserves all the moisture, so even without a special sauce the fish stays incredibly tender and infused with the fragrance of herbs and lemon. Rub the whole fish with salt, pepper and olive oil, stuff the cavity with sprigs of rosemary, thyme, lemon slices and smashed garlic cloves.
