
Pea soup with smoked sausage
Pea soup with smoked sausage is a delicious thick and hearty first course. The main component of the soup is dried peas.

Ingredients
- peas (split) - 1 cup;
- sausage (smoked) - 150 g;
- potatoes - 300 g;
- onion - 100 g (1 pc.);
- vegetable oil - 1 tbsp;
- carrot - 125 g (1 pc.);
- bay leaf - 2 pcs;
- salt;
- black pepper (ground);
- dill - a few sprigs;
- water - 1.5-2 l.
Preparation
1. Arrange the ingredients according to the list for making pea soup with smoked sausage. To speed up the cooking of the peas, they must first be soaked in cool water and left for several hours. It is best to do this overnight.

2. Thoroughly rinse the peas, draining the water several times until the water is completely clear, while rubbing the peas with your fingers. The prepared peas are now sent to a pot, filled with 1.5 l of water and put on the fire. After boiling, reduce the heat and cook the peas until soft. The time depends on the hardness of the peas (from 30 to 60 minutes).

3. Do not overcook the peas into a puree.

4. Rinse the potatoes, peel them, and cut them into small cubes.

5. When the peas are soft and cooked, add the chopped potatoes to the pot. Cook until the potatoes are ready, about 15 minutes.

6. Meanwhile, start preparing the sauté for the pea soup. Peel the onion and cut it into small cubes. After peeling the carrot, grate the root vegetable on a grater with large holes.

7. Sauté all the prepared vegetables in vegetable oil until lightly golden and soft, 3-4 minutes.

8. Add the sautéed vegetables to the soup, cook for 5 minutes.

9. Remove the casing from the sausage, cut it into small cubes.

10. Add the sausage pieces to the soup.

11. Follow with salt, pepper, and bay leaf.

12. Cook the soup with sausage for another 5-7 minutes.

13. Finely chop the herbs, add them to the soup. Stir and turn off the heat. Remove the bay leaves from the soup. The pea soup with smoked sausage is now ready.

14. Let the soup sit for 15 minutes and ladle into bowls.

15. Serve the soup with croutons.
