Pampushky are the iconic small fluffy yeast buns of Ukrainian cuisine, traditionally served alongside a bowl of red borscht or any rich soup. They're remarkably simple to make but unbelievably aromatic — fresh warm buns brushed with garlicky herb butter become a dish in their own right. Knead the dough with warm water or milk, yeast, sugar, oil and salt and let it rise for 1-1.5 hours. Shape into small rolls, arrange them touching each other in a baking dish, proof for another 20-30 minutes and bake at 180°C (350°F) for 20-25 minutes until golden.
