Cooking
1. Prepare all the ingredients for making the yeast dough. Sift the flour, and make sure the eggs and butter are at room temperature by taking them out of the fridge in advance. Heat the milk to 32-36⁰C.
2. ;First, prepare the yeast mixture. Add sugar (about a teaspoon from the total amount) to the warm milk. Add a couple of tablespoons of flour (from the total amount) and yeast.
3. Whisk the mixture. Cover the bowl with a towel, plastic wrap, or a lid, and place it in a warm spot for about 15 minutes to activate the yeast.
4. In a large bowl, beat the eggs and add the remaining sugar and salt. Mix well.
5. The yeast should have risen well, forming a foamy top.
6. Pour the yeast mixture into the egg mixture.
7. Gradually add the flour to the mixture. Add the vanilla to the flour beforehand.
8. Add softened butter to the dough. Continue mixing with a whisk.
9. When it becomes hard to mix with a whisk, dust your work surface with flour and transfer the dough to it. Knead the dough by hand for about 7-10 minutes. The dough should be sticky, clinging to your hands and the surface. You can add about 30 grams of flour if needed, but no more.
10. Place the dough in a greased bowl, cover with plastic wrap, and leave in a warm place to rise. You can use the oven for this step. Preheat the oven to 30°C, then turn off the heat. The oven light provides just enough warmth. Leave the dough in the oven for an hour.
11. For the filling, prepare the butter, sugar, and cinnamon. The butter should be soft.
12. Mix the sugar and cinnamon together.
13. After an hour, take the dough out of the oven. It should have doubled in size and become soft and airy.
14. Lightly dust your work surface with flour and place the dough on it. After rising, the dough should no longer be sticky. Stretch it into a rectangle.
15. Fold the dough like an envelope.
16. Using a rolling pin, roll the dough into a thin rectangle about 5-7 mm thick.
17. Spread a layer of softened butter over the surface of the dough. Adjust the amount of butter according to your preference.
18. Generously sprinkle the buttered surface with the cinnamon sugar mixture.
19. Roll the dough into a log. Don't roll it too tightly, but make sure it stays together.
20. Grease a baking dish with vegetable oil.
21. Slice the log into individual rolls. To get even rolls, it’s convenient to use a piece of thread to cut the dough. Place the rolls in the dish, leaving space between them.
22. Bake the cinnamon rolls for 25-30 minutes at 180°C until golden.
23. One key to perfect Cinnabon rolls is to cover them with cream while they are still warm. For the frosting, you will need cream cheese, powdered sugar, and a bit of milk (if necessary). Add milk if the frosting is too thick.
24. Mix all the ingredients into a smooth, thick frosting.
25. Spread the delicious frosting over the warm rolls. The rolls will absorb the frosting, making them incredibly tender. The cinnamon adds a wonderful aroma.
Cinnamon rolls (Cinnabon style) – truly a homemade treat. Enjoy!
