
Okroshka on kvass with sausage
A cold soup, such as okroshka on kvass with sausage, perfectly quenches hunger and thirst. I suggest an excellent recipe for okroshka. This simple solution simplifies the cooking process, reduces time, as you don’t need to stand at the stove boiling meat in the heat. Just chop the vegetables, eggs, fragrant herbs, your favorite boiled sausage, and pour in the kvass.

Ingredients
- sausage - 200 g;
- green onion - 30 g;
- potatoes - 4 pcs;
- radish - 150 g;
- cucumber (fresh) - 1-2 pcs;
- dill - a few sprigs;
- eggs - 4 pcs;
- salt;
- kvass - 1.5 l;
- sour cream (for serving) - 200 g.
Preparation
1. Lay out the necessary products for our okroshka on kvass with sausage on the table. The kvass should be unsweetened and moderately sour; especially tasty okroshka comes from homemade kvass.

2. Wash the potatoes with a brush to remove dirt, boil until done with the skin on, for about 15-20 minutes (depends on the variety and size of the tubers). In a separate container, boil the eggs hard, for 10 minutes. Then cool the potatoes by taking them out of the pot and placing them on a plate, and cool off the eggs in running cold water.

3. Meanwhile, deal with the other ingredients of the okroshka. Now cut the sausage into cubes (fairly small).

4. Wash the radish, slice it into rings (thin). If the radish is large, cut the rings into halves or quarters. Wash the cucumbers, pat dry, and cut the fruits lengthwise. Now slice them (fairly thin), into half rings or quarters.

5. Wash the green onion and dill, shake off the water, and chop them as finely as possible.

6. Peel the eggs and also cut them into cubes.

7. Peel the potatoes and cut them into cubes, the same size as the eggs.

8. Combine all the components and mix them in a deep bowl.

9. Store the chopped ingredients dry in the refrigerator, and pour in the kvass only before serving.

10. Spoon the necessary portion into a bowl.

11. Now pour the cool kvass into the bowl, adding salt if desired, and mix. Now the okroshka on kvass with sausage is practically ready. Add the sour cream and serve.
