Products for a 3-liter pot:

  • salmon - 0.5 kg;
  • carrot - 1 pc;
  • onion - 1 pc;
  • small tomato - 3 pcs;
  • large potato - 2 pcs;
  • 33% cream - 30 ml;
  • marjoram - 10 g;
  • bay leaf - 3 pcs;
  • salt - to taste;
  • black pepper - to taste;
  • red ground pepper - to taste;
  • butter - 50 g;
  • fresh dill - 1 bunch;
  • fresh parsley - 1 bunch.

Preparation

  1. To prepare Finnish creamy salmon soup, first, you need to make the broth. Rinse fresh salmon (I took 2 steaks) well under running water, place it in a pot with cold water. Bring the water to a boil, then lower the heat, and simmer for 30 - 40 minutes.

  2. Cut the onion into large pieces and send it to the frying pan, sauté in butter.

  3. Grate the carrot coarsely and add it to the onion; let the vegetables sauté for 10 minutes over low heat.

  4. Wash the tomatoes and peel them.

    Tip: pour boiling water over the tomatoes and leave for 10 minutes, so the skin can easily come off without damaging the flesh of the vegetables.

  5. Chop the tomatoes into small pieces and add them to the frying pan.

  6. Pour the vegetables with 33% cream, simmer the resulting mixture over low heat for 10 minutes.

  7. Remove the boiled salmon from the broth onto a separate plate.

  8. Cut the potato into small cubes and send it to cook in the prepared broth.

  9. When the potato is cooked, add the sautéed vegetable and cream mixture to it.

  10. Break the fish into medium-sized pieces and add it to the pot.

  11. Add salt, pepper, 3 bay leaves to the soup, and sprinkle with marjoram. Optionally, add red hot ground pepper.

  12. Finely chop the herbs and garnish the Finnish creamy salmon soup.

    Interesting fact: cream can be replaced with milk, then the soup will be less fatty, but it will also be called differently: "Kalakleitto".

    Serving: serve the soup garnished with lemon, with fresh corn or buckwheat bread.
