
Liver pancakes made from beef liver
Liver pancakes are always delicious, hearty, and healthy. In my opinion, the most delicious, juicy, and tender liver pancakes are made from beef liver. But if you don't have it, you can use chicken liver instead. To ensure the pancakes are juicy, I highly recommend adding sautéed vegetables to the minced meat. Beef liver pancakes are prepared very simply according to our step-by-step recipe with photos and require only a small number of ingredients. The minimum set includes onion and carrot. You can also add other vegetables – they will give the pancakes an unusual flavor.

Ingredients
- beef liver - 1 piece;
- onion - 1 piece;
- carrot - 1 piece;
- garlic - 2 cloves;
- egg - 1 piece;
- flour - 2-2.5 tablespoons;
- salt - 1 teaspoon;
- black pepper ground;
- vegetable oil.
Preparation
1. Prepare all the necessary ingredients.

2. Finely chop the onion. Also, mince a couple of cloves of garlic.

3. Grate the carrot on a large grater.

4. In a frying pan, heat the vegetable oil and add the prepared vegetables. Sauté them until soft.

5. Meanwhile, rinse the liver, clean it from membranes, and pass it through a meat grinder.

6. Also chop the sautéed vegetables until smooth using a meat grinder. This will make the minced meat, and ultimately the pancakes, tenderer. Mix the minced liver, vegetables, add the egg, salt, and pepper in one bowl. Stir.

7. Now add 2-2.5 tablespoons of flour and mix until smooth. The consistency should be like good thick sour cream.

8. In a frying pan, heat the vegetable oil and spoon the liver batter to form pancakes. Fry them over medium-low heat on both sides until cooked. Don't fry for too long to prevent the liver from turning into "crusts" and to keep it juicy and tender.
