
Globe Salad for Winter
Tomatoes and sweet peppers have always harmoniously complemented each other in any proportions. And if these vegetables are canned in a jar, it will make a great Globe salad for winter.
Preparation time: 50 minutes + 8 hours the jars should sit under a blanket.
Yield: 2 jars (1 jar with a capacity of 650 grams and 1 jar - 200 grams (another 70 grams for tasting).
Caloric content: 60 kcal per 100 grams of the dish.
Ingredients
- meaty tomatoes - 500 g;
- sweet ground peppers - 400 g (the weight is specified without the seed boxes);
- white onion - 150 g;
- carrot - 150 g;
- white sugar - 50 g;
- rock salt - 25 g;
- odorless vegetable oil - 30 ml;
- 9% vinegar - 30 ml.
Preparation
1. Prepare the specified ingredients.

2. To obtain tomato juice from the tomatoes, first cut them into pieces that are convenient for grinding.

3. Chop the tomatoes in a food processor or other chopper. If the tomato skins are finely ground (literally - to dust), there is no need to remove the skin.

4. Cut out the seed boxes from the peppers. Rinse the fruits from any leftover seeds and cut them into elongated triangles.

5. Chop the carrot into strips.

6. Shred the onion.

7. Place the vegetable mixture into a pot.

8. Pour tomato over it.

9. Season with salt and sugar.

10. Immediately add the oil.

11. After mixing, place the mixture over medium heat. When the mixture begins to boil, set a timer for 40 minutes and reduce the heat to low. In the meantime, sterilize clean glass jars and boil the lids. 3 minutes before the allotted time is up, add the vinegar and immediately cover the pot with a lid to prevent evaporation.

12. Distribute the mixture among the jars.

13. Screw on the caps - either twist-off or using a canning machine. Turn the jars upside down and wrap them in a large terry towel. In such a thermal bath, the jars should sit for 8 hours.

14. The Globe salad for winter can be placed in a dark area even at room temperature, but away from heating appliances. It can be stored for a year, and in a cool place for six months longer. The bright color and rich taste of the salad will delight the family in the autumn-winter period, as it transforms even the simplest side dish.
