
Okroshka with kefir and mineral water with sausage
Okroshka with kefir and mineral water with sausage is most often prepared in summer as a refreshing first course, but connoisseurs of this light and hearty cold soup are ready to eat it year-round. Especially tasty, delicate okroshka is obtained when kefir and mineral water are used as a dressing. Kefir gives softness and velvety to the dish, while mineral water adds a refreshing note.

Ingredients
- kefir 2.5% - 500 g;
- cucumber (fresh) - 1 pc;
- mineral water - 500 g;
- boiled sausage - 200 g;
- potato (medium size) - 3 pcs;
- eggs - 3 pcs;
- green onion - 30 g;
- dill - 10 g;
- salt.
For serving:
- mustard - to taste.
Preparation
1. Lay out the ingredients for the okroshka with kefir and mineral water.

2. Take medium-sized potatoes. Rinse them from dust and possible contaminants under running water. Then, lay the cleaned potatoes in a pot, fill it with cool water, and put it on to heat. Boil the potatoes whole in their skins for about 20 minutes.

3. Having washed the eggs, boil them hard for 10 minutes. Then transfer them from the pot to a bowl of cool water.

4. For the okroshka, take boiled sausage, without lard. Remove the film if there is any and cut into cubes.

5. Rinse the cucumber and cut it into random pieces: cubes or small sticks. Chop the herbs.

6. Peel the boiled potatoes and now cut them into cubes.

7. Remove the shells from the boiled eggs, cut them into cubes like the potatoes.

8. Combine all the ingredients in a pot.

9. Mix so that all ingredients are evenly distributed throughout the mass. This mixture can be prepared in advance and put in the pot, covered with a lid, in the refrigerator.

10. Okroshka with kefir and mineral water with sausage is ready. Serve it chilled. Distribute the mixture into bowls and pour over with kefir and mineral water. Serve with mustard. If desired, you can mix kefir with mineral water, mustard in advance and pour this mixture over the laid-out dry ingredients of the okroshka.
