
Potato pancakes with minced meat
A hearty homemade dish that delights with its taste and affordability, as well as being quick to prepare! You can make potato pancakes with minced meat in different ways. For example, in this recipe, the minced meat is added directly to the dough. Alternatively, it can be added as a filling layer during frying, alternating the potato layer with the meat. Ingredients
- 6 large potatoes (about 300-400 g);
- 1 large onion;
- 1 large chicken egg (or 2 smaller ones);
- 3-4 tablespoons of wheat flour;
- 150 g of minced meat (a mix of pork and beef);
- 2 tablespoons of mayonnaise;
- 1 teaspoon of salt (or to taste);
- Spices – optional;
- 200-250 ml of sunflower oil.
Preparation
1. Peel the large potatoes and onion. Wash the vegetables.

2. Then grate them on a medium grater. You can also grate them on a fine grater, but usually, this takes twice as long. Additionally, pancakes from a fine grater turn out to be softer. The choice is yours. If desired, you can use a food processor, choosing the attachment for quick grating of vegetables. Then squeeze out the liquid, if there is any.

3. To prevent the potato mass from darkening, squeeze a little lemon juice on it and mix. Then add the egg, salt, spices, and mayonnaise.

4. After that, add the minced meat (pork and beef is the tastiest) and the wheat flour.

5. Mix the potato mass. If you want the potato pancakes to be fluffy, you can give them volume by adding a tablespoon of baking powder to the dough.

6. Now it's time to fry the potato pancakes. Heat the oil in a frying pan (pour about 50 ml of oil for each batch). Using a tablespoon, lay out the potato mass, forming pancakes of the same size (1 tablespoon heaped per pancake). Fry for 1.5-2 minutes on each side over medium heat.

7. Potato pancakes with minced meat reveal their best flavor when hot. They can be served straight from the pan, garnished with herbs (cilantro, dill, lettuce leaves), favorite sauces (mushroom, cheese, etc.), or sour cream.
