Salmon Head Soup

Fish soup lovers will definitely enjoy the tasty, hearty, and rich soup made from salmon heads. In this soup, I only add vegetables, but you can also add grains, making the soup thicker and more hearty. You can prepare the soup not only from the head but also use the tail and the backbone. Finnish Salmon Soup is also a delicious dish worth trying. You can also add a bit of white fish fillet to the head, making the taste even more vibrant and rich.

Cooking Time: 60 minutes.

Ingredients

  • salmon head - 1 pc;
  • potatoes - 200 g;
  • carrots - 2 pcs;
  • onion - 2 pcs;
  • herbs - 1 tbsp;
  • bay leaf - 1 pc;
  • water - 2 l;
  • salt - 1 tsp.

Preparation

1. Prepare all the necessary ingredients for the salmon head soup. Peel and rinse the potatoes, onions, and carrots. Defrost the salmon head, remove the gills and, if desired, the eyes. To reduce the amount of foam during boiling, the head can be soaked in cold water for 1 hour.

2. Boil 2 l of water. Place the salmon head in the boiling water, cook over medium heat, constantly removing the foam that will appear on the surface.

3. When the foam stops appearing, add 1 whole onion, 1 carrot, and a bay leaf to the pot. Cook for 20-30 minutes. During this time, the broth will become clearer.

4. Now remove the head, vegetables, and bay leaf from the broth. Place the salmon head on a plate to cool, and you can discard the boiled carrot and onion; they have served their purpose. If desired, strain the broth through a sieve or cheesecloth.

5. Cut the potatoes into small cubes, grate the second carrot on a coarse grater, and chop the second onion into small cubes. Add the prepared vegetables to the broth, salt it, and cook over medium heat.

6. When the salmon head cools, separate all the edible parts.

7. Add the salmon meat to the soup, and boil until all the vegetables are cooked through.

8. When the soup is ready, taste for salt; if necessary, add more salt, as well as fresh or frozen herbs. Remove the soup from heat and let it stand for 10-15 minutes.
