
Captain's meat baked with potatoes
An ideal dish for all occasions, both for a guest day and for a family lunch – captain's meat baked with potatoes. The idea of this recipe is that the meat (usually pork) is beaten, seasoned with salt and pepper, and then laid out in a baking dish. The upper layers of onion and potatoes are alternated, and the top is covered with a cheese-mayonnaise cap. As a result, you get tender meat and a side dish that looks very appetizing.
Yield: 6 servings (baking dish size 34 x 30 centimeters).

Ingredients
- pork loin – 600 g;
- potatoes – 900 g;
- white onion – 200 g;
- hard cheese – 200 g;
- thick mayonnaise, 67% fat – 160 g for mixing with cheese + 50 g in pure form;
- refined vegetable oil – 1 tsp;
- salt, pepper – to taste.
Preparation
1. Prepare the ingredients for cooking captain's meat baked with potatoes. The loin can be replaced with another part of the pork carcass, but it should be cut across the fibers, just like the loin, to become tender and thin during the beating process.

2. Cut the meat into pieces that are 1.5-2 centimeters wide.

3. Place them on a board, cover with plastic wrap (to avoid splattering meat juice), and beat with a kitchen mallet to a thickness of 0.5-0.7 centimeters.

4. Sprinkle the pieces with salt and pepper on both sides and let them sit aside to marinate in these additions. At this stage, you can already preheat the oven to 180-190 degrees with both top and bottom heating.

5. Grate the cheese coarsely.

6. Add 160 grams of mayonnaise to it and mix – this is necessary so that the cheese does not burn during baking, but just gets a nice golden color.

7. Cut the large potatoes lengthwise, and then thinly slice them along with the small ones (the slices should be about 2-3 millimeters thick).

8. Grease the dish with vegetable oil.

9. Evenly distribute a bit of onion on the bottom – it will serve as a great cushion for the meat and protect it from sticking.

10. Lay the meat tightly. The pieces do not need to be placed in portions, at a distance from one another – during the baking process they will soften well and will be very easy to cut together with the potatoes of any size. 11. Again, sprinkle some onion on top.

12. Lay half of the potatoes in a thin layer in the dish. There is no need to salt the potatoes, as the mayonnaise and cheese already contain salt. But if you prefer it saltier, add a bit of salt.

13. Distribute half of the mayonnaise-cheese mixture on top.

14. Next – the remaining onion.

15. Then – the second layer of potatoes.

16. Evenly spread the remaining cheese mixture on top.

17. Fill the empty spaces between this mixture with pure mayonnaise.

18. Cover the dish with foil and place it in the middle of the preheated oven for 1 hour.

19. After this time, remove the foil. Check readiness with a fork – if it easily pierces the potatoes, the dish is ready.

20. Now, it's time to brown the top cap. For this, leave the dish in the oven (this time without foil) for another 10 minutes, turning on the convection mode. If there is no such mode, increase the baking time by 5 minutes.

Aromatic and hearty dish, captain's meat baked with potatoes, is ready. The pork has cooked perfectly and literally melts in your mouth. The potato side dish has absorbed all the juices and became juicy and tender. And, of course, the golden and appetizing cheese cap not only added its flavor but also gave the dish a finished look.
