
Marinade for pork kebab
To make the meat cooked over the fire tasty and juicy, it is important to choose the right marinade for pork kebab. It will make the fibers not only tender and melt-in-your-mouth, but will also enhance the flavor, making it more vibrant and rich.
For meat from a young animal, any marinade will do, and the meat doesn’t need to be soaked in it for long (half an hour is enough). However, regular pork meat, especially if it is not heavily marbled with fat, requires a special marinade that will soften any tissues and make the kebab incredibly tasty.
This marinade uses only two ingredients – onion and mayonnaise. Onion juice perfectly softens the meat fibers, and mayonnaise aids in this as well. The meat should be marinated for 4 hours, but it can also be left for a whole day, as onion has bactericidal properties, so nothing bad will happen to the meat during this time.

Ingredients
- pork – 900 g;
- white onion – 320 g;
- thick mayonnaise – 140 g;
- freshly ground pepper – 1 tsp.
Preparation
1. Prepare the ingredients. Any part of the pork carcass will work for kebab in this marinade – the meat will definitely turn out soft and tender. Salt is not added to the marinade, as there is enough in the mayonnaise. However, if desired, you can add a little more salt.

2. Cut the meat into fairly large pieces so that they do not burn immediately on the skewers or grill, but only brown on the outside while remaining juicy inside.

3. The onion for this marinade is not chopped with a knife, but prepared in a special way. It should be a very juicy onion puree. You can achieve this by grinding the onion in a food processor or grating it by hand.

4. Place the onion puree and mayonnaise in the container where the marinating will take place.

5. Add freshly ground pepper as well.

6. Mix everything well.

7. Lay the meat in the container. Distribute it in the marinade so that none of the sides of the meat piece is left uncovered by this mayonnaise-onion sauce. Close the container with a lid and place it in the refrigerator for 4 hours.

This marinade for pork kebab is also suitable for other types of meat such as veal, lamb, and poultry. However, poultry should only be marinated for a short time – about half an hour. The meat should be grilled over glowing coals, either skewered or spread out on a grill. It can also be grilled, having previously dabbed the sticking pieces of onion with a paper towel to prevent burning.
