
Lula kebab in the oven on skewers
This dish is very popular in the Middle East. Long thin patties made from minced meat are grilled on coals, but it is also successful to prepare lula kebab in the oven on skewers.
To make the dish almost identical to the original, it's better to make 2/3 of the meat base from beef and the remaining part from fatty pork (or replace with tail fat). And, of course, it is essential to include sharp fresh cilantro and Eastern dry spices in the minced meat.

Ingredients
- beef pulp - 450 g;
- fatty pork - 250 g;
- onion - 150 g;
- cilantro - 55 g;
- Eastern spice for barbecue - 10 g;
- salt, pepper.

Preparation
1. Grind all the meat (without the onion) into minced meat.

2. Grate the onion separately, then squeeze out the juice - it is not needed in the lula kebab as it will make the meat too liquid and poorly hold on the skewers.

3. Chop the cilantro with a knife.

4. Combine the prepared ingredients in one container for mixing.

5. Add Eastern spices and salt. Knead the minced meat thoroughly and for quite a while (about 3-5 minutes) - it should become noticeably sticky.

6. Next, beat the meat, thus removing any tiny air bubbles and increasing its stickiness. It is convenient to do this by forcefully throwing small portions of minced meat into another bowl. This procedure should be repeated 5-7 times.

7. Now the meat preparation should be chilled by placing it covered in the refrigerator for a couple of hours.

8. Before starting to skewer the lula kebab, prepare the skewers and have water on hand for moistening your palms.

9. To ensure all pieces are the same size, you can weigh the meat portions or do it "by eye". Pinching off a small piece of minced meat, mold it around the skewer, pressing it firmly against it. Pay attention to ensure the edges of the piece are not thinner than the main body and do not burn as a result.

10. Once the long patty is formed, clap it between your palms, rolling it several times in a circle.

11. Place the prepared lula kebab on a lined baking sheet.

12. Move it to the middle shelf of the already preheated oven (optimal temperature - 200 degrees) with heating from top to bottom.

13. After 20-25 minutes, the meat will be fully cooked.

A strong smell of spicy herbs spreads throughout the kitchen during baking. Lula kebab in the oven on skewers turns out very juicy, with their characteristic taste and aroma. This dish is served with plenty of greens and necessarily with lavash.
