Zucchini Caviar "Fingers Lick"

Zucchini Caviar "Fingers Lick" is a very tasty appetizer that doesn't last long on the table. The dish is bright, juicy, and appetizing.

Ingredients

  • young zucchini - 1000 g;
  • carrot - 200 g;
  • onion - 200 g;
  • black pepper (peas) - 10 pcs;
  • sugar - 1.5 tsp;
  • tomato paste 25% - 1 tbsp (heaping);
  • salt - 1 tsp;
  • allspice (peas) - 4 pcs;
  • vegetable oil - 4 tbsp.

Preparation

1. Lay out the products needed to prepare the wonderful zucchini caviar on the table.

2. For convenience, we prepare all the vegetables right away. Let's start with the zucchini. It's better to choose young zucchini with thin skin and small, underdeveloped seeds. With such zucchini, there are fewer waste and less hassle. After washing the fruits, we dry them. Then, after cutting off the stems, we chop the vegetables. The shape of the chop doesn't matter because we will grind the zucchini later. If we cut the zucchini into circles, they will fry better and faster. The optimal thickness of the circles is about 0.7 cm.

3. Pour refined oil into the pan and fry our zucchini until golden brown.

4. Place the fried vegetable circles into a small cauldron.

5. Add 1 tbsp of water, then cover with a lid and simmer for 20 minutes.

6. After cleaning the onion, we chop it quite coarsely and randomly. After peeling, we grate the carrot on a grater with large cells.

7. Sauté the onion over low heat until soft, without browning it. We also add the carrot here. We simmer the vegetables together to soften the carrot.

8. Combine the prepared ingredients.

9. Blend the cooled vegetable mixture in a blender.

10. Now transfer the vegetable puree from the blender into a cooking pot with a thick bottom to prevent the vegetable puree from burning. It's quite convenient to use a cauldron for this purpose. We put the cauldron with the vegetable mixture on low heat. Stirring the mixture, we begin to simmer.

11. Add 1 heaping tbsp of tomato paste. Simmer the mixture for 10-15 minutes under the lid until thickened.

12. At this stage, add salt and sugar, and mix everything thoroughly and very carefully.

13. Now grind the peppercorns in a grinder. Pour the ground pepper into the cauldron with the caviar. After mixing, simmer for another 3-5 minutes. At this stage, stir the caviar continuously. Do this carefully, as the thickened mixture starts bubbling and forcefully splattering hot drops of zucchini mixture. Bring the caviar to the desired thickness and remove from heat. The zucchini caviar "Fingers Lick" is now practically ready. Take the caviar to a cool place to cool down.

14. Serve the zucchini caviar chilled. For an extra touch, finely chopped garlic can now be added to the caviar.
