The appetizer turns out unusual, few will guess that it is made from zucchini. Be sure, after trying the crispy rings of zucchini, many will love this vegetable. To make the snack a little saltier, for example with beer, add to bread crumbs a couple of pinches of salt and some hot spices. To add piquancy and spiciness to the dish, serve with rings a spicy tomato, mustard, or sour cream sauce.

Zucchini in batter can be prepared in advance, in case an addition is needed. Lay out the fully breaded rings on a cutting board and send them to the refrigerator. Approximately 2-4 hours, the semi-finished products will keep well in a chilled state.

Ingredients

  • fresh small zucchinis – 2 pcs.;
  • odorless vegetable oil for frying – 1 cup;
  • flour – 4-6 tablespoons;
  • bread crumbs – 200-250 g;
  • raw egg – 1 pc.;
  • water or milk – 2-3 tablespoons;
  • flour – 2-3 tablespoons;
  • garlic – 1 clove;
  • spices – ¼ teaspoon;
  • salt – a couple of pinches;

Preparation

  1. Peel the zucchinis, slice them crosswise into rings about 0.7-1 cm thick. Using improvised tools, cut a hole in the center of each ring with a diameter of about 1.5-2 cm.

  2. Place the rings in a suitable dish, sprinkle with spices to taste, add salt, and leave for 15-30 minutes. When the zucchinis release juice, drain it.

  3. In separate plates, pour flour, bread crumbs. Prepare the batter, whisk the egg with salt, a couple of tablespoons of flour, and water (if available, use milk). Add a quarter teaspoon of your favorite spices and crushed garlic to the batter (optional). The consistency of the batter should be like pancake batter.

  4. Dredge each ring in flour, then dip into the batter, letting the excess drip off. Try to thoroughly coat the zucchinis with the breading layers, so that during frying the zucchini juice doesn't flow out and "splash" in the oil.

  5. Bread the rings in crumbs. Instead of bread crumbs, crumbled stale white bread will work (preferably from the day before).

  6. Pour vegetable oil into a dry skillet (layer about 1-1.5 cm), heat well. Place the rings into the oil, fry until golden brown on one side, then flip to the other side.

  7. Remove the fried rings with a slotted spoon or kitchen tongs, place them on a paper towel to remove excess fat.

  8. Serve the ready zucchini rings with a sauce made of mayonnaise or sour cream mixed with finely chopped greens, garlic, and black ground pepper (optional).
