Ingredients

  • moss mushrooms – 800 g;
  • whole allspice – 11 pcs;
  • rock salt – 1 tbsp. (with a heaping);
  • sugar – 1 tsp. (with a heaping);
  • clove buds – 3 pcs;
  • 9% vinegar – 2 tbsp.

Preparation

1. For pickling moss mushrooms for the winter, prepare the necessary components. Rinse the mushrooms thoroughly under cold water and let them dry.

2. Cut the moss mushrooms as desired. Small specimens can be left whole: they will shrink during cooking. Transfer the cut mushrooms to a deep pot.

3. Add 2 cups of water to the pot with the cut moss mushrooms and place it on medium heat.

4. Occasionally stirring, bring the mushroom mixture to a boil. After it starts boiling, cook for 5 minutes, removing the foam that forms.

5. Next, transfer the mushrooms to a colander and rinse them thoroughly under cold running water.

6. Return the mushrooms to the pot and add water so that it covers the moss mushrooms by 2 centimeters.

7. Add sugar, salt, whole allspice, and clove buds to the mushrooms.

8. Heat the pot over medium heat. Occasionally stirring, bring the mushrooms to a boil and carefully remove the foam. After it starts boiling, cook for another 25 minutes.

9. Then pour in 2 tablespoons of vinegar and mix thoroughly. Cover the pot with a lid and cook for 5 more minutes.

10. In a previously sterilized liter jar, carefully pack the mushrooms and then pour the marinade to the very top of the jar.

11. Cover the jar with a sterilized lid and, using a canning machine, seal it tightly. Turn the jar upside down and let it cool completely.
