
Green Georgian Tomatoes for Winter
Green Georgian tomatoes are pickled and fermented for the winter. In any case, you get an unusual snack with a slight spiciness, because Georgian cuisine has always been characterized by an abundance of spicy seasonings. However, in our opinion, the marinade gives the preparation a more piquant taste. Therefore, we share with you the recipe for preserving green tomatoes for winter.

Ingredients
- green tomatoes - 2 kg;
- garlic - 1 head;
- parsley - 20 g;
- dill - 20 g;
- cilantro - 20 g;
- basil - 20;
- chili pepper - 1 piece;
For the marinade:
- water - 2 l;
- sugar - 190 g. or 9.5 tbsp. (without a heap);
- salt - 80 g. or 4 tbsp. (without a heap);
- vinegar 9% - 200 ml.
Preparation
1. Prepare and lay out the necessary ingredients on the table. Wash and dry the green tomatoes and herbs. Peel the garlic from the skins. Sterilize jars and lids beforehand.

2. Grate all the garlic cloves on a fine grater or pass them through a garlic press.

3. Finely chop the dill, parsley, basil, and cilantro.

4. Cut the chili pepper finely, having previously removed the seeds and stem.

5. In a deep plate, mix the prepared herbs, garlic, and chili pepper. The filling is ready.

6. Make one or two deep cross cuts on the tomatoes, that is, do not cut them all the way to keep the fruits intact.

7. Fill the cuts of the tomatoes with the prepared filling.

8. Pack the tomatoes tightly into the jars.

9. Prepare the marinade. For this, put a pot with two liters of water on the fire. As soon as the water starts to heat, add 80 grams of salt and 190 grams of sugar and mix everything. After the water boils, add 200 milliliters of 9% vinegar and mix everything. Let the marinade boil for a few more minutes and remove from heat.

10. Fill the jars with green tomatoes with boiling marinade to the brim of the neck, then cover them with sterilized lids.

11. Place a cloth on the bottom of a deep pot, put the jars on it, and fill the pot with warm water up to the shoulders of the jars. Place the pot on the heat.

12. After the water boils, sterilize the preparations for 30 minutes, then remove them from the pot.

13. Roll the jars up with lids.

14. Turn the preparations upside down and leave them in this position at room temperature until completely cool.

15. Green Georgian tomatoes for winter are ready.
