Black currant with sugar without cooking

The best sweet preparation for winter, which preserves the taste, color, aroma, and most importantly – all the vitamins – is black currant with sugar without cooking. It seems like a simple recipe, but it hides some pitfalls, and not knowing them, the preserve may not last until the next harvest due to berry fermentation.

So, some features:

  1. This preparation must be stored in the refrigerator. It can be kept in either glass or plastic food containers – the main thing is that they are well processed with boiling water or steam.
  2. Before pureeing, the berries must be thoroughly dried (you can even use a hairdryer for this).
  3. After adding sugar, the mixture is not immediately distributed into jars, but left for about 8 hours in a cool place so that all the sugar dissolves completely and the currants gel slightly.

Yield: 2 containers (with a total volume of 1.8 liters).

Preparation time: 10 hours.

Caloric content: 243 kcal per 100 grams of the dish.

Ingredients

  • black currant – 1 kg,
  • white sugar – 1.2 kg.

Preparation

1. Gather the ingredients. Measure the sugar after sorting the currants. And also – it’s better to start working in the evening, as the sugar sprinkled on the berries must dissolve completely (this takes about 8 hours). And in the summer night, it’s not as hot in the room as during the day, and the preparation can safely be left on the balcony or veranda.
