
Green Tomato Salad for Winter
You can make green tomato salad for winter without sterilization even from substandard fruits; the main condition is that they must be firm. Any kind of damage can simply be trimmed off and discarded, while the healthy parts can be used. Any unripe tomatoes will do, and brown ones will also work. A delicious green tomato salad in winter can be served with a potato side dish or simply as an appetizer.

Ingredients
- green tomatoes - 1.5 kg;
- carrots - 500 g;
- onion - 500 g;
- bell pepper - 500 g;
- salt - 40 g. (5 teaspoons without a heap);
- sugar - 100 g. (4 tablespoons heaped);
- vinegar 9% - 50 g. (10 teaspoons);
- vegetable oil - 150 g. (7.5 tablespoons).
Preparation
1. Prepare the necessary ingredients. Cut the tomatoes into small wedges, the bell pepper into thin strips, and the onion into quarters. Grate the carrots on a vegetable grater. Preliminarily sterilize the jars and lids.

2. Place the prepared vegetables in a deep pot.

3. Mix everything and set it over medium heat.

4. Next, add to the vegetables: sugar, salt, vinegar, and vegetable oil.

5. Stirring occasionally, bring the mixture to a boil.

6. After boiling, reduce the heat to below medium and cook, stirring, for another 30 minutes.

7. Fill the sterilized jars with the salad to the brim of the neck.

8. Roll up the preparation and turn the jar upside down. Do the same with the other jars. Leave them in this position until completely cool.

9. The green tomato salad for winter is ready. Such conservation will surely delight you in winter.
