
Nezhinsky Cucumber Salad for Winter
This gently salted snack, Nezhinsky cucumber salad for winter, is nothing to prepare in a flash, merely by opening a jar and drizzling the contents with fragrant oil. The charm of this preparation, besides the pleasant lightly salted taste of the crunchy cucumbers with onions, is also that any fruits are suitable for it - even crooked, twisted, and overripe ones. The result will definitely please.
Preparation time: 4 hours + 2 hours under a blanket.
Yield: 1 jar with a volume of 650 grams and a leftover of 100 grams for tasting.

Ingredients
- cucumbers of any shape and ripeness - 0.6 kg;
- a bunch of dill and parsley mix;
- white onion - 150 g;
- rock salt - 12 g;
- white sugar - 12 g;
- 9% vinegar - 1 tablespoon;
- odorless vegetable oil - 30 ml.
Preparation
1. Prepare all the ingredients for making Nezhinsky cucumber salad for winter.

2. Usually, cucumbers are soaked for a couple of hours before canning. But for this preparation, this procedure can be skipped and you can immediately start cooking. Cut the fruits into slices of 5 mm.

3. Cut the onion into long thin feathers.

4. Chop the herbs.

5. Transfer the prepared chopped ingredients into a pot.

6. Season everything with salt and sugar.

7. Pour in the oil as well.

8. Now the cucumber mixture needs to be thoroughly stirred for 2-3 minutes, after which its volume will slightly decrease. Cover the contents with a lid and leave it like that for 4 hours.

9. After the specified time, the cucumbers will release a lot of juice and shrink even more. Prepare the canning jars by sterilizing them in a convenient way.

10. Place the pot over heat and at the moment it boils, pour in a spoonful of vinegar and stir the mixture.

11. Cook it for 5 minutes, constantly swapping the bottom and top layers. Turn off the stove and fill the jars with the salad to the very top.

12. After sealing with screw caps or a canning machine, turn the jars upside down, then wrap them in a thick towel. However, to prevent the cucumbers from becoming too soft, almost boiled, keep them in a thermal bath for only 2 hours.

13. The Nezhinsky cucumber salad for winter can be stored in a heated room, but not next to a heat source. It will last in the room until the next harvest. And if there is a cool basement - even better, although storing any sealed jars for more than a year is not recommended.
