
Birch juice with lemon
It is no secret that birch juice contains a lot of beneficial properties that saturate the body with various micro and macroelements. Typically, birch juice is used to make kvass or is preserved. One of the preservation methods is canning birch juice. According to our step-by-step recipe, birch juice with lemon turns out very aromatic and taste-wise similar to lemonade.
Time for preparation: 20 minutes.
Caloric content: 53 kcal per 100 grams of the dish.
Yield: 1 jar 3 liters.
Ingredients
- lemon – ½ pc;
- birch juice – 3 l;
- sugar – 250 g.
Preparation
1. For preservation, use only fresh (recently collected) birch juice. Filter it several times through a fine sieve to remove any debris or insects that might have entered the juice during collection.

2. Measure the required amount of birch juice for preservation and pour it into a pot. Add sugar to the juice, stirring thoroughly until it completely dissolves. Bring the birch juice to a boil, and after it boils, let it simmer for two to three minutes.

3. Meanwhile, wash the lemon thoroughly, cut off the end, and slice it thinly into rounds.

4. Place the lemon slices at the bottom of a previously boiled three-liter jar. Add 3 to 4 slices of lemon to the jar (a larger number of citrus will make the drink rich and overly sour).

5. As soon as the birch juice has boiled, carefully pour it into the jar with the lemon.

6. Immediately seal the jar with lemonade using a previously boiled metal lid. Turn the jar with the drink upside down and wrap it in a warm blanket.

7. Once the preservation has completely cooled, store it in a cool place. It is advisable to store birch juice with lemon for no more than two years. It is best to drink this beverage chilled. Successful preparations!
