
Cucumbers in tomato for the winter
In the height of canning, be sure to prepare a simple yet very tasty snack – crispy cucumbers in tomato for the winter. This preparation is easy to make, does not require sterilization, which, you must agree, significantly simplifies the canning process, especially in hot season. Pickled cucumbers with the aroma of parsley and garlic in tomato sauce turn out very appetizing and, of course, aromatic. It should be noted that you can adjust the spiciness of the cucumbers in tomato to your taste. For instance, if you do not like spicy preserves, then it’s better to avoid adding hot pepper to the snack. Ingredients
- cucumbers – 2 kg;
- tomatoes – 2 kg;
- salt – 1 tbsp;
- sugar – 100 g;
- garlic – 1 – 2 heads;
- vegetable oil – 150 ml;
- hot pepper – 1 piece (optional);
- 9% vinegar – 25 ml;
- parsley – 1 bunch.
Preparation
1. Wash the tomatoes (they must be ripe), then grind them into tomato puree using a meat grinder or blender. Pour the resulting tomato into a pot (preferably with a thick bottom, so the cucumber snack does not burn during cooking), set on medium heat and boil (from the moment of boiling) for 30 minutes.

2. Also wash the cucumbers, then, after trimming the ends, cut them into circles (if the cucumbers are large – into halves/quarters of circles).

3. Add the chopped cucumbers to the tomato, carefully mix. As soon as the cucumbers boil, cover the pot with a lid and cook the future snack for 15 minutes from the moment of boiling.

4. Then add salt, sugar, and pour in the vegetable oil. Mix well.

5. Next, add chopped parsley, minced garlic, and if desired, finely chopped hot pepper (if you want the snack to be spicy).

6. Mix the cucumbers in tomato again and cook (from the moment of boiling) for about 5 minutes. Then pour in the 9% vinegar, mix the snack and distribute it into sterilized jars.

7. Roll up/close the jars with previously boiled lids, turn them upside down and wrap them well in something warm.

8. Crispy cucumbers in tomato for the winter are ready. As soon as the preserves cool down, take them to storage in the cellar. Delicious crispy cucumbers in tomato can be tasted just a few weeks after canning. Happy canning!
